Tilapia Po’ Boy Sandwich is a quick and easy recipe for a spicy Cajun style meal. Only 30 minutes to make from start to finish. Cooking Time: 10 Minutes.

5 tilapia fillets (1-1/4 lbs total)
3 Tbsp Cajun seasoning, divided
1/3 cup reduced-fat mayonnaise with olive oil
1 (20″) baguette, partially split, cut crosswise
into 5 equal sized pieces

2 Roma tomatoes, each cut into 5 equal size slices
2-1/2 cups shredded Romaine lettuce


1. Season fish with 2 tbsp of the Cajun seasoning. Mix remaining 1 Tbsp Cajun seasoning and mayonnaise together.

2. Heat a large nonstick skillet over medium-high heat. Add fish; cook 5 minutes on each side or until fish flakes easily with fork. Meanwhile, spread mayonnaise mixture onto cut sides of bread.

3. Fill bread in evenly divided amounts with fish, tomatoes and lettuce.

Yield: 5 Servings.
