Tex-Mex Chicken Casserole is an easy and delicious recipe for a weeknight meal that will end up as a favorite dish for your family. Ingredients include boneless, skinless chicken, bell peppers, beans, tomatoes, cream cheese and shredded cheese. Non-Stick cooking spray
3/4 lb boneless, skinless chicken breasts, cut into bite-size pieces
2 tsp ground cumin, (adjust as desired)
1 green bell pepper, chopped
1-1/2 cups thick & chunky salsa
2 oz (1/4 of 8-oz pkg.) Neufchatel cheese, cubed
1 can (15 oz) no-salt-added black beans, rinsed
1 tomato, chopped
2 whole wheat tortillas (6 inch)
1/2 cup finely shredded (Mexican 2% four cheese blend), divided


1. Preheat oven to 375º F.

2. Cook and stir chicken and cumin into a nonstick skillet sprayed with cooking spray over medium heat 2 minutes. Add in the bell peppers; cook 2 minutes, stirring occasionally. Stir in the salsa; cook 2 minutes. Add in Neufchatel; cook 2 minutes or until melted. Stir in the beans and tomatoes.

3. Spread  1/3 of the chicken mixture onto the bottom of an 8″ square baking dish; cover with 1 tortilla and half each of the remaining chicken mixture and shredded cheese. Top with remaining tortilla and chicken mixture.

4. Cover dish and bake 20 minutes or until heated through. Sprinkle with remaining shredded cheese; bake, uncovered 5 minutes or until melted.
YIELD: 4 Servings.
