INGREDIENTS:

1 (16 oz) pkg. frozen cheese ravioli
3 zucchini, cut in half lengthwise
1 small  red onion, cut into 1/2″ thick slices
3 tbsp olive oil, divided
1/4 cup grated Parmesan cheese, divided
2 garlic cloves
1 (14.5 oz) can diced tomatoes, undrained

DIRECTIONS:

1. Preheat grill to medium.

2. Cook ravioli in a large saucepan as directed on package, omitting salt. Meanwhile, brush zucchini and onions evenly with 2 tbsp of the olive oil; sprinkle with 2 tbsp of the Parmesan cheese. Grill 5 minutes on each side or until crisp-tender. Remove from grill; cut into 1″ pieces.

3. Drain ravioli; set aside. Cook and stir garlic in remaining oil in same saucepan over medium heat 3 minutes Add tomatoes; simmer over medium-low heat 5 minutes, stirring occasionally. Add ravioli; stir to evenly coat.

4. Add in grilled vegetables; mix lightly. Top with remaining cheese.

Yield: 8 Servings.

2 zucchini, cut into 1/4″ thick slices
2 Roma tomatoes, thinly sliced
1/2 cup finely chopped red onions
1/4 cup Italian salad dressing
2 tbsp chopped fresh basil
3/4 cup shredded Italian five-cheese-blend with a touch of cream cheese

DIRECTIONS:

1. Preheat oven to 425°  F.

2. Arrange 4 rows of zucchini alternately with 3 rows of tomatoes on bottom of 9″ square baking dish sprayed with cooking spray, overlapping rows as necessary. Sprinkle with onions; drizzle with dressing. Cover.

3. Bake 30 to 35 minutes or until zucchini is tender, uncovering after 20 minutes.

4. Top with the basil and cheese; bake another 5 minutes or until cheese is melted.

1 tsp olive oil
1 medium size zucchini, cut in half lengthwise, sliced in
1/4 inch thick slices

1 tomato, chopped
2 tsp dried minced onions
1/2 tsp garlic powder
1/4 tsp seasoned salt
1/4 tsp thyme leaves
1/8 tsp ground black pepper
3 eggs
1/2 cup shredded cheddar cheese

DIRECTIONS:

1. Heat oil in a 9-inch nonstick skillet over medium-high heat. Add zucchini; cook and stir 2 minutes. Add tomato, minced onion, garlic powder, seasoned salt, thyme leaves and pepper; cook and stir 1 minute.

2. Beat eggs in a medium size bowl. Pour over vegetables in skillet. Reduce heat to medium-low; cover and cook 7 minutes.

3. Sprinkle with cheese. Cover and cook 2 minutes longer or until cheese is melted.

Yield: 4 Servings
