Sweet Potato-Pecan Casserole is a delicious and easy to fix recipe. Once you have tried this it will become your must have side-dish for all your fall and winter holidays; but why wait until then? You can do this anytime of the year because all the ingredients are available year round. It takes only (15) minutes to assemble and only (55) minutes to cook. Makes 10 servings. INGREDIENTS:

1/2 cup firmly packed brown sugar, divided
2 tbsp orange juice
2 tsp pure vanilla extract
1-1/2 tsp pumpkin pie spice, divided
3 lbs sweet potatoes, peeled and cut into (1-inch) pieces
4 tbsp butter, divided
1/4 cup all-purpose flour
1/2 cup chopped pecans
2 cups miniature marshmallows

DIRECTIONS:

1. Preheat oven to 375°F.

2. Mix 1/4 cup of the brown sugar, orange juice, vanilla and 1 teaspoon of the pumpkin pie spice in a large bowl. Add sweet potatoes; toss to coat. Spoon into a 13 x 9-inch baking dish. Dot with 2 tablespoons of the butter. Cover.

3. Bake 45 minutes or until potatoes are slightly tender.

4. Meanwhile, mix flour, remaining 1/4 cup brown sugar and remaining 1/2 teaspoon pumpkin pie spice in a medium size bowl. Cut in remaining 2 tablespoons butter with fork until crumbly. Stir in pecans and marshmallows.

5. Remove casserole from oven and stir gently to coat potatoes in syrup. Sprinkle evenly with marshmallow-crumb topping. Bake, uncovered, 7 to 10 minutes longer or until potatoes are tender and topping is golden brown.

YIELD: 10 servings.
SERVING SIZE: 3/4 cup per serving.

Twice-Baked Sweet Potatoes is a delicious, easy and quick recipe for a holiday side dish. It will become your favorite sweet potato recipe for Thanksgiving and Christmas. It is also a generally nutritious recipe. It is low in calories, low in fat, low in sodium, low in cholesterol and low in carbohydrates. Though NOT a diet recipe it calculates to a WW (5) PointsPlus recipe. Apple juice, brown sugar, marshmallows, ginger, coconut and butter  combine to make this a recipe you will add to your holiday menu. Great for any special occasion meal. Makes 12 Servings. Twice-Baked Sweet Potatoes will be twice-baked-sweet-potatoesloved by all your family, friends and guests.

INGREDIENTS:

6 sweet potatoes (2-1/2 lb.), baked, slightly cooled
1/2 cup butter or margarine, melted
6 Tbsp apple juice
2 Tbsp packed brown sugar
1/2 tsp ground ginger
1 cup miniature marshmallows
1/3 cup flaked coconut
1 Tbsp butter or margarine, melted

DIRECTIONS:

1. Preheat oven to 350°F.

2. Cut potatoes in half lengthwise. Scoop out centers, leaving 1/8-inch-thick shells. Mash potatoes in medium bowl. Add the 1/2 cup butter, apple juice, brown sugar and ginger; beat until fluffy.

3. Spoon into the shells. Mix remaining ingredients; spoon over potatoes.

4. Bake for 20 to 25 minutes or until heated through.

YIELD: 12 Servings.
Serving Size: 1 Potato half per serving.

Sweet Potato Pie is a delicious recipe for this traditional Southern pie. It takes (30) minutes to prepare, but the final results are ALWAYS worth the time and effort. It will go quickly; so make a second one for after the guests leave or you won’t have any for yourself. Made with either fresh or canned sweet potatoes, spiced with brown sugar, ginger, cinnamon, cloves, ginger and nutmeg to give the perfect, to die for flavor in a made from scratch crust. INGREDIENTS:

For Crust:

1 cup all-purpose flour
1/8 tsp salt
1/3 cup butter, cut into chunks
3 to 4 tbsp cold water

For Filling:
1-1/4ups firmly packed brown sugar
4 medium size sweet potatoes, cooked skins removed, (1-1/2 cups) mashed.
{Note: 1-1/2 cups canned mashed sweet potatoes may be substituted}.

3/4 tsp ground cinnamon
1/2 tsp salt
1/2 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1 cup (8 oz) canned evaporated milk
3 eggs

Topping:
Heavy Whipping Cream

DIRECTIONS:

1. Preheat oven to 350° F.

2. Combine flour and 1/8 tsp salt in a bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Stir in enough water with fork just until flour is moistened. Shape into a ball; flatten slightly.

3. Roll out ball of dough on lightly floured surface into a 12″ circle. Fold into quarters. Place dough into 9″ pie pan; unfold, pressing firmly against bottom and sides. Trim crust to 1/2″ from edge of pan. Crimp or flute edge. Set aside.

4. Combine all filling ingredients except evaporated milk, eggs and whipped cream in a bowl. Beat at medium speed, scraping bowl often, until well mixed. Add milk and eggs; beat at low speed until well mixed.

5. Pour filling into crust. Bake 50-60 minutes or until knife inserted in center comes out clean. If crust is browning too quickly, cover edge with a 2-inch wide strip of aluminum foil. Cool completely. Garnish with whipped cream, if desired. Sprinkle with decorator sugar, if desired. Store refrigerated.
