Ingredients include: Bread cubes, celery, chicken broth and onions. Seasoned with salt, black pepper and poultry seasoning. This is also a low calories, low fat, low cholesterol, low sodium, low sugars, low carbohydrates, heart-healthy, diabetic-friendly and Weight Watchers (5 SmartPoints), (4 PointsPlus) recipe. (12 oz) Italian bread, cut into 1″ cubes
6 slices whole wheat bread, cut in 1″ cubes

Baked Pork Chops and Apples is a delicious, easy and quick (45 minute) total time start to finish recipe. A great any day dish that uses boneless chops, stuffing mix and apple pie filling all baked together in the oven. Add a salad and/or your favorite green vegetable to round out the meal. Although this is NOT a diet friendly recipe, I have included the WeightWatchers PointsPlus value for those who need it. Makes 6 servings. Baked Pork Chops and Apples will be loved by all ybaked-pork-chops-apples-stuffingour family, friends and guests.

INGREDIENTS:

Non-Stick cooking spray
1 (6 oz) box stuffing mix for pork,
NOTE: (If you can’t find stuffing mix for pork,
chicken stuffing mix will also work.)

1 can (21 oz) apple pie filling
6 boneless pork chops (1-1/2 lb total), 3/4 inch thick
Salt, black pepper, poultry seasoning, optional (season to taste.)

DIRECTIONS:

1. Preheat oven to 375º F.

2. Prepare stuffing mix as directed on package.

3. Spread the pie filling onto bottom of 13 x 9 inch baking dish sprayed with cooking spray. Season chops if desired. Place chops and stuffing over apple filling. Cover.

4. Place in oven and cook for 35 minutes or until chops are done (145º F.), uncovering for the last 5 minutes. Remove baking dish from oven; let stand for 3 minutes before serving.

YIELD: 6 servings.

Could easily be adapted to lower points if desired or forget the diet and make up your Points later. After all it’s a holiday just enjoy. Makes (18) servings. Wild Rice Dressing is a delicious, easy and very healthy recipe that is low in calories, low in fat, has NO cholesterol, low in sodium, low in sugars and low in carbohydrates. Use it as a side-dish or a stuffing. Ingredients include both wild and brown rice with mushrooms, celery and onions, seasoned perfectly. This is a WeightWatchers (2) PointsPlus and also a diabetic recipe. Makes 6 Servings. Wild Rice Dressing will be loved by family and friends alike.wild-rice-dressing

INGREDIENTS:

1/4 cup wild rice
1/4 cup brown rice
1 tsp instant chicken bouillon
1/4 tsp ground sage or nutmeg
2 cups sliced fresh mushrooms
1/2 cup chopped celery
1/3 cup sliced green onions
1/2 cup sliced almonds or pine nuts, toasted (optional)

DIRECTIONS:

1. Rinse uncooked wild rice in a strainer under cold water about 1 minute; drain. In a medium size saucepan combine wild rice, the 1-3/4 cups water, uncooked brown rice, bouillon granules and sage. Bring to a boil; reduce heat. Simmer covered for 20 minutes.

2. Add mushrooms, celery and green onion. Cook covered over medium-low heat about 25 minutes more or until vegetables are just tender, stirring frequently. If desired, stir in almonds. Serve immediately as a side-dish or cool and use to stuff a (3-1/2 to 4 lb) broiler-fryer chicken.

To Make Ahead
Prepare as above through step 2. Transfer stuffing to a 1-quart casserole. Cover and chill for up to 24 hours. Stir in 1/4 cup water. Bake covered in a 375 F. oven about 30 minutes or until heated through.

Yield: 6 servings
Serving Size: 1/2 cup per serving.
