French Breakfast Muffins is a delicious recipe that can be used for breakfast, brunch, a snack or even dessert. This was a very popular recipe from the 1970’s. Great for Thanksgiving and Christmas also. Cinnamon, sugar, nutmeg and butter combine together to bring out the flavor of doughnuts. A quick (15) minutes of prep time and 35 minutes, start to finish. Makes 12 servings. French Breakfast Muffins will be loved by your entire family, friends and guests.

INGREDIENTS:french-breakfast-muffins

Muffins:

1/2 cup milk
1/3 cup melted butter
1 egg, beaten
1-2/3 cups all-purpose flour
3/4 cup sugar
1-1/2 tsp baking powder
1/2 tsp nutmeg
1/2 tsp salt

Topping:

1/3 cup melted butter
1/2 cup sugar
1 tsp ground cinnamon

Spread

Butter

DIRECTIONS:

1. Preheat oven to 375° F.

2. Grease a 12 cup muffin pan; set aside.

3. Combine milk, 1/3 cup melted butter and egg in a bowl. Set aside.

4. In another bowl, combine flour, 3/4 cup sugar, baking powder, salt and nutmeg. Add in the egg mixture; stir just until combined.

5. Spoon batter into prepared pan. Bake 15-20 minutes or until toothpick inserted comes out clean.

6. Place the 1/3 cup melted butter in a bowl. Combine 1/2 cup sugar and cinnamon in another bowl. Remove muffins from pan; let stand 2 minutes to 5 minutes on cooling rack.

7. Serve warm with butter.

YIELD: 12 servings.
Serving Size: 1 per serving.

6 wooden popsicle sticks
6 (3 oz) paper cups

DIRECTIONS:

1. Place all ingrdients in a blender. Blend on high speed until smooth.

2. Pour into 6 (3 oz) paper cups; cover with foil. Insert popsicle stick into center of each cup.

3.  Freeze several hours or until firm. Peel off paper cups just before serving.

Spinach, tomatoes and cheese with a sprinkling of crushed red pepper for a bit of spice. INGREDIENTS:

1 (16 oz) box 2% Milk Velveeta®, cut into 1/2″ cubes
1 (14-1/2 oz) can diced tomatoes, undrained
1 (10 oz) box frozen chopped spinach, thawed, drained
1/4 tsp crushed red pepper

DIRECTIONS:

1. Microwave the Velveeta and tomatoes in a 1 quart size microwaveable bowl on HIGH 5 minutes or until Velveeta is completely melted, stirring every 2 minutes.

2. Add in the remaining ingredients; mix well. Microwave on HIGH 2 minutes or until heated through; stir.

3. Serve hot with breadsticks, tortilla chips and/or assorted cut-up fresh vegetables.
