Slow Cooker Beef Pot Roast is an easy, delicious and hearty recipe full of vegetables. It’s also a WeightWatchers ( 7) PointsPlus+ recipe. Makes 8 servings. You and your family will love this Slow Cooker Beef Pot Roast.

Ingredients:slow-cooker-beef-pot-roast

1 (2-1/2 to 3 lb) boneless chuck or rump roast, well-trimmed
5 cups cut-up fresh vegetables, such as carrots, celery, onions & potatoes
1 pkg slow cooker pot roast seasoning mix
1 cup water

Directions:

1. Place beef and vegetables in slow cooker.

2. Mix Seasoning Mix and water until blended. Pour over beef and vegetables.

3. Cook 8 hours on LOW or 4 hours on HIGH. Remove roast and vegetables to serving platter. Stir sauce before serving and ladle over meat and vegetables.

Yield: 8 servings.
Serving Size = 1/8 recipe
