Sausage-Cheese Appetizers is a quick and easy Memphis-style recipe that takes only 15 minutes to prepare. Crackers topped with grilled Kielbasa sausage and cheddar cheese. INGREDIENTS:

4 oz Cheddar cheese, cut into 12 slices
1/2 lb Kielbasa sausage, grilled until done, cut into 24 slices
24 Ritz Crackers
1 tsp paprika

DIRECTIONS:

1. Cut each cheese slice in half. Place 6 crackers on a microwaveable plate; top each with 1 sausage slice and 1 cheese slice. Sprinkle lightly with paprika.

2. Microwave on HIGH 10 to 15 sec. or until cheese begins to melt.

3. Repeat with remaining ingredients.

Yield: 12 Servings

Italian Turkey-Squash Casserole is a quick to assemble recipe for a delicious and healthy meal. It is a low calories, low fat, low carbohydrates, WeightWatchers (5) PointsPlus+ recipe. Takes only (15) minutes to put together. Makes 4 servings. Italian Turkey-Squash Casserole will be loved by family and guests.

INGREDIENTS:turkey-squash-casserole

Non-Stick cooking spray
1 (4 lb) whole spaghetti squash
4 Italian style turkey sausage links, casings removed, (about 12 oz)
1 tbsp Parmesan cheese
2 tsp salt-free garlic and herb seasoning, such as Mrs. Dash’s
1 medium size tomato, diced
1 cup chopped fresh baby spinach

DIRECTIONS:

1. Preheat oven to 350 F.

2. Spray a a 9″ x 13″ baking pan with nonstick cooking spray. Cut squash in half lengthwise, scoop out seeds and place cut side down in baking pan. Bake 45 to 50 minutes, until tender.

3. Remove squash from oven and let cool slightly. Remove squash from pan and using a fork, scrape out flesh back into pan; spread out evenly.

4. Spray a large skillet with nonstick cooking spray. Crumble sausage into skillet and cook over medium-high heat until no longer pink, breaking into small pieces with spoon. Remove from heat.

5. Sprinkle 1 tbsp Parmesan cheese and 1 tsp garlic and herb seasoning over squash. Top with tomato, spinach and crumbled sausage; sprinkle with remaining 1 tbsp Parmesan cheese and the remaining 1 tsp garlic and herb seasoning. Lightly coat the mixture’s surface with cooking spray.

6. Bake 20 to 25 minutes more or until casserole heats through and cheese melts.

1 tsp canola oil
(2 oz) smoked turkey sausage, cut into 1/2 inch slices.
1 cup frozen diced hash brown potatoes
1/2 of a small zucchini, halved lengthwise and cut into 1/2 inch pieces
1/2 of a medium red bell pepper, seeded, coarsely chopped
1 red onion wedge, thinly sliced (about 1/3 cup)
1 garlic clove, minced
1/4 tsp black pepper
1/4 tsp chili powder

Directions:

1. In a large nonstick skillet, heat oil over medium heat. Add sausage, potatoes, zucchini, bell pepper, onion, garlic, chili powder, and black pepper to skillet.

2. Cook for 4 to 5 minutes or until sausage is lightly browned and vegetables are tender, stirring occasionally. Divide equally onto 2 plates and spoon salsa over mixture.

Yield: 2 Servings

This hearty and delicious, Sausage-Egg Breakfast Casserole can be ready in less than one hour or you can make it the night before, refrigerate overnight and bake it in the morning. Optionally, choose low fat cheese, milk and sausage for a lighter version. Your family and friends will love this Sausage-Egg Breakfast Casserole.

Ingredients:

1 roll (12 ounces) breakfast sausagesausage-egg-breakfast-casserole
2 cups shredded Cheddar cheese
6 eggs, beaten
1 cup water
1/2 cup milk
1 envelope sausage gravy mix
6 slices bread, cut into 1-inch cubes
2 tbsp melted butter (optional)
Paprika

Directions:

1. Preheat oven to 325° F.

2. Crumble the sausage into a large skillet over medium heat until brown, stirring occasionally. Drain and spread intoa lightly greased 11 x 7 inch baking dish. Sprinkle cheese over sausage.

3.  Beat eggs, water, milk and gravy mix together in a medium size bowl with wire whisk until well blended. Pour over cheese. Arrange bread cubes evenly over mixture. Drizzle butter over bread, if desired. Sprinkle with paprika.

4. Bake, uncovered for 40 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving. Divide into 8 equal size portions.

Yield: 8 Servings

Note:
Cover and refrigerate unbaked casserole overnight. Bake uncovered in preheated 325° F. oven 50 minutes or until knife inserted in center comes out clean.

Optional:
Prepare additional package sausage gravy mix as directed on package. Serve spooned over casserole if desired.
