Breakfast Muffin Sandwich-This is a healthier version of a popular fast food chain’s breakfast muffin. Need I say more? Egg Substitute, turkey bacon and cheese on an English muffin. Quick to make and take it with you if headed for school or work. Delicious, you’ll love this Breakfast Muffin Sandwich recipe. Both a Diabetic and A Weight Watchers Friendly recipe also.


Non-Stick cooking spray
1 cup  cholesterol-free egg product
1 English muffin, split, toasted
1 slice 2% cheddar cheese singles
1 slice cooked turkey bacon, cut in half
Miracle Whip Light, optional


1. Cook egg product in skillet sprayed with cooking spray over medium heat 3 minutes or until set, stirring occasionally.

2. Fill muffin halves with egg, cheese and bacon.

Optional: If desired spread top half of muffin with Miracle Whip Light.

Yield: 1 Sandwich

Chicken Salad Sandwiches is both a simple and delcious recipe. For lunch or dinner or anytime. Makes 4 servings. Everyone will enjoy these Chicken Salad Sandwiches.


1/2 cup plain lowfat yogurt

Chicken Salad Sandwiches

Chicken Salad Sandwiches

2 tbsp mayonnaise
1 tsp dried parsley flakes
1/2 tsp seasoned salt
1/2 tsp ground black pepper
1/2 of a rotisserie chicken, cut into bite size
chunks (about 2 cups)

1/2 cup thinly sliced celery
1/4 cup chopped red onion
8 bread slices


1. In a large bowl, mix together the yogurt, mayonnaise, parsley, seasoned salt and pepper. Add in chicken, celery and onion; toss to coat well. Cover.

2. Refrigerate at least 30 minutes or until ready to serve.

Add 1/2 cup fresh or dried fruit such as chopped dried apricots, chopped apple or halved grapes to the chicken salad. Or add 1/4 cup chopped nuts such as pistachios, pecans or walnuts if desired.

Yield: 4 sandwiches, 1 sandwich per serving (1/4 of recipe) serving size.
