2 tbsp olive oil
(1-1/2 lbs) boneless pork chops, 3/4″ thick, (6 chops)
1 medium onion, thinly sliced (about 1/2 cup)
1 (24 oz) jar marinara sauce
1 (10 oz) box frozen leaf spinach, thawed, well drained
(To thaw spinach, microwave on for HIGH 3 minutes, breaking apart with a fork
halfway through heating).
1 cup shredded fat-free Mozzarella cheese (4 oz)
Whole grain pasta, optional
