Grilled Vegetables is a tangy and delicious side dish recipe containing yellow squash, zucchini and bell peppers with Italian salad dressing and sprinkled with Parmesan cheese. It is easy to prepare and quick cooking. Perfect for grilling parties and holiday cookouts. It is both a Diabetic and a WeightWatchers (2) PointsPlus+ recipe. Makes 8 servings. Grilled Vegetables will loved by family and friends alike.


2 zucchini, cut into 1/2 inch-thick slices
2 yellow squash, cut into 1/2 inch-thick slices
2 each red, green and yellow peppers, cut into 1-1/2-inch-wide strips
1/3 cup light oil base Italian salad dressing
1/4 cup grated Parmesan cheese


1. Preheat grill to medium.

2. Grill for 10 minutes or until crisp-tender, turning occasionally.

3. Remove and place in a large bowl. Add dressing; toss to coat. Sprinkle with the cheese.

Yield: 8 servings.
