Banana-Chocolate Parfaits is an easy, delicious and healthy low calories, low fat, low cholesterol, low sodium, low carbohydrates, WeightWatchers (4) PointsPlus, diabetic and heart healthy recipe. Chocolate pudding, layered with bananas and whipped topping. A simple and delicious recipe for a dessert or a snack. Makes 4 servings. Banana-Chocolate Parfaits will be loved by kids and adults alike.

INGREDIENTS:banana-chocolate-parfaits

1 (1.4 oz) box fat-free sugar-free chocolate instant pudding mix
2 cups cold skim milk
2 bananas, sliced
3/4 cup frozen light whipped topping, thawed, divided

DIRECTIONS:

1. Beat together the pudding mix and milk with a whisk for 2 minutes.

2. Spoon half the pudding evenly and equally into 4 dessert glasses; cover with layers of bananas and half the whipped topping. Top with remaining pudding and whipped topping.

INGREDIENTS:

1 (1.4 oz) box fat-free sugar-free chocolate instant pudding mix
2 cups cold skim milk
1/2 cup frozen light whipped topping, thawed
12 miniature marshmallows
2 tbsp dry roasted peanuts, chopped

DIRECTIONS:

1. Beat together pudding mix and milk with whisk 2 minutes Spoon 3/4 cup into medium bowl; gently stir in whipped topping until blended.

2. Spoon remaining pudding into 4 (6 oz) parfait glasses or dessert dishes; top with whipped topping mixture. Refrigerate 5 minutes.

3. Top with marshmallows and peanuts.

Tropical Fruit Parfaits is an easy and also healthy recipe. It is a diabetic and also a WeightWatchers (4) Points+ per serving recipe. It is low in calories, low in fat, NO-cholesterol, low in sodium and  low in sugars. Tropical Fruit Parfaits makes for a tasty dessert or treat anytime. Makes 6 servings.

Ingredients:tropical-fruit-parfaits

3 tbsp shredded sweetened coconut, divided
2 cups nonfat Greek style plain yogurt
1/4 cup crushed pineapple, drained
1 tsp vanilla extract
8 packets Splenda Essentials no-calorie sweetener w/ Fiber
2 bananas, sliced
1 cup peeled and chopped mango
4 kiwi fruit, peeled and chopped

Directions:

1. Toast coconut in a small skillet over low heat for 5 to 8 minutes or until golden brown; stirring frequently.

2. Mix yogurt, crushed pineapple, vanilla, Splenda and 2 tbsp of the toasted coconut together in a small mixing bowl. Set aside.

3. Mix chopped fruit together.

4. Spoon about 2 tablespoons of yogurt mixture into parfait glasses or other clear serving dishes. Top with about 1/4 cup of the fruit mixture. Repeat so there are two layers of yogurt and two layers of fruit in each serving dish. Sprinkle each parfait with a bit of the remaining toasted coconut.

Yield: 6 Servings
Serving Size: About 1 Cup per serving.
