Meatless Grilled Stuffed Mushrooms is a healthy, meatless main dish recipe. This tasty recipe is not only low in calories, fat and cholesterol but also high in Vitamins A and C. It is a Vegetarian, Diabetic AND Weight Watchers PointsPlus+ recipe as well. You’ll love these Meatless Grilled Stuffed Musmeatless-grilled-stuffed-mushroomshrooms.

Ingredients:

2  portobello mushrooms (3/4 lb)
1/4 cup light balsamic Vinaigrette salad Dressing, divided
1/2 cup cooked long-grain brown rice
1/2 cup chopped seeded tomatoes
1/3 cup 2%shredded Italian 3-heese blend
1/4 cup chopped fresh basil or 1-1/2 tbsp dried basil

Dire:ctions:

1. Using a spoon, remove stems and brown gills from underside of mushroom caps. Discard gills; chop stems and set aside. Brush both sides of mushroom caps evenly with 2 tbsp of the salad dressing.

2. Heat remaining dressing in a small skillet over medium heat. Add the chopped stems; cook and stir 6 minutes or until tender. Stir in rice, tomatoes, cheese and basil.

3. Grill mushrooms, top side up, 5 minutes; turn so opposite side of mushrooms face forward. Fill with rice mixture; grill another 5 minutes or until mushrooms are tender and cheese is melted.
Yield: 2 Servings
