3 (15 oz) cans black beans, drained, rinsed
2 (14-1/2 oz) cans fat-free reduced-sodium chicken broth
1 (28 oz) can diced tomatoes, undrained
1 onion, chopped
1 zucchini, chopped
1 celery rib, chopped
1 carrot, peeled, chopped
1 (6 oz) pkg (Oscar Mayer or siimilar), baked cooked ham, chopped
1/2 tsp ground cayenne pepper
1 cup water
1 (7-1/4 oz) box macaroni & cheese dinner
2 cups fresh spinach leaves

Easy Minestrone Soup is a Low Calorie, Low Fat, Low Cholesterol, Weight Watchers (5) PointsPlus+ recipe for a hearty, delicious soup. Loaded with vegetables and cheesy pasta. It can easily be converted to a Vegetarian recipe by replacing the chicken broth with vegetable Broth. Makes 12 servings. Everyone will love this Easy Minestrone Soup.

Ingredients:easy-minestrone-soup

3 (15 oz) cans black beans, drained, rinsed
2 (14-1/2 oz) cans fat-free reduced-sodium chicken broth
1 (28 oz) can diced tomatoes, undrained
1 onion, chopped
1 zucchini, chopped
1 carrot, peeled, chopped
1 celery rib, chopped
1 pkg (6 oz) baked, cooked ham, chopped
( fom luncheon meat department, Oscar Mayer makes one)

1/2 tsp ground cayenne pepper
1 cup water
1 (7-1/4 oz) box macaroni & cheese dinner
2 cups fresh spinach leaves

Directions:

1. Combine beans, broth, tomatoes, onions, zucchini, celery, carrots, ham and cayenne in a Dutch oven or stockpot. Bring to a boil over medium-high heat. Reduce heat to low; cover. Simmer 10 minutes or until vegetables are crisp-tender.

2. Add in the water and macaroni; stir. Cook 7 to 8 minutes or until macaroni is tender.

3. Stir in cheese sauce mix from the mac & cheese dinner and spinach; cook 2 minutes or until spinach is wilted, stirring occasionally. Serve immediately.

Yield: 3 Quarts (12 servings)
Serving Size: 1 Cup per serving
