INGREDIENTS:

6 tbsp + (plus 1/2 cup) all-purpose flour
1 tsp salt, divided, plus more to taste
1/2 tsp freshly ground pepper, plus more to taste
2-1/2 lbs boneless, skinless chicken thighs, trimmed
4 tsp extra-virgin olive oil, divided
3 slices bacon, chopped
1 (14 oz) Guinness beer or other stout
1 lb whole baby carrots, or large carrots cut into 1″ pieces
1 (8 oz) pkg cremini or button mushrooms, halved if large
2 cups chopped onions
4 garlic cloves, minced
1-1/2 tsp dried thyme
1 cup reduced-sodium chicken broth
2 cups frozen baby peas, thawed

Irish Coffee is an easy and delicious recipe for an almost identical recipe from Ireland. Though this is NOT a diet recipe it converts to a WeightWatchers (1) PointsPlus+ per serving recipe. It is low in calories, low in fat, NO cholesterol, NO sodium and low in sugars, heart-healthy and diabetic friendly. Perfect for Fall and Winter and of course, Saint Patrick’s Day! Makes (1) serving. Add in some “Bailey’s Irish Cream” and you have a drink called a “Blarney Stone”, served in the Irish Pubs. Irish Coffee will be loved by you, your family, friends and guesirish-coffeets.

INGREDIENTS:

1/2 cup hot brewed black coffee
2 tbsp Irish whiskey
1 tsp granulated sugar
2 tbsp frozen whipped topping, thawed

DIRECTIONS:

1. Mix together the first 3 ingredients in a heatproof goblet or stemmed coffee cup.

2. Top with the thawed whipped topping just before serving.

Yield: 1 serving.

Irish Soda Bread is a must item for your Saint Patrick’s Day meal and celebration. You’ll need to make 2 of this one as it will go quickly. can be frozen also up to 2 months if you have leftovers. Though not a diet recipe, I have included nutrition information for those who need it. It converts to a (1-1/2) Carb Choice and WW (5) Points+ per serving. Irish Soda Bread is studded with currants and makes 16 servings.

Ingredients:irish-soda-bread

Non-Stick cooking spray
3-1/4 cups flour
cups  flour
1/3 cup plus 1 tbsp sugar, divided
1 tsp baking Powder
1 tsp baking soda
1 tsp salt
1/2 cup cold butter, cut up
1-1/3 cups buttermilk
1/2 cup currants or raisins
2 to 3 tap Caraway Seeds (optional)

Directions:

Preheat oven to 350° F.

2. Mix flour, 1/3 cup sugar, baking powder, baking soda and salt in a large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Add buttermilk and currants; (Add 2 to 3 tsp caraway seeds to flour mixture along with the buttermilk and currants if desired). Stir just until moistened.

3. Place dough on a lightly floured surface; knead 10 times. Shape into a 2-1/2 inch-thick round. Place on baking sheet sprayed with cooking spray. Cut deep 1/2-inch “X” in top of dough; sprinkle with remaining sugar.

4. Bake 1 hour or until golden brown. Remove from baking sheet to wire rack; cool completely before cutting into wedges. (cut into 16 equal-sized wedges).

NOTE:
Store leftover bread in resealable plastic bag at room temperature up to 24 hours. Or, for longer storage, wrap tightly and freeze up to 2 months; thaw at room temperature before serving.

Yield: 16 servings

INGREDIENTS:

1 (1-1/2 lb) boneless beef round steak,
trimmed, cut in bite size pieces

2 tbsp flour
2 tbsp cooking oil
1 large onion, coarsely chopped
1 (14-1/2 oz) can beef broth
1 (14-1/2 oz) can stewed tomatoes, undrained
1 (0.8 oz) envelope garlic & herb salad dressing mix
(1 lb) red potatoes (about 3), cut into 3/4″ chunks
3 carrots, cut into 1/2″ thick slices
4 cups hot cooked noodles

DIRECTIONS:

1. Coat meat with flour. Heat oil in a Dutch oven or large deep skillet over medium-high heat. Add in meat & onions; cook and stir 5 to 8 minutes or until meat is evenly browned. Stir in broth, tomatoes and dressing mix. Bring to a boil, stirring occasionally; cover and simmer over low heat 15 minutes, stirring occasionally.

2. Add in potatoes and carrots; simmer, covered for 45 minutes or until meat is tender and sauce is thickened, uncovering after 30 minutes and stirring occasionally. Serve over noodles.

Yield: 8 equal size servings.
