Tropical Fruit Salad is an easy and quick 20 minute recipe for a delicious side salad. Made with mangos, pineapple, kiwi, oranges and grapes with a sour cream dressing. Perfect for summer grilling meals. It is also a heart-healthy, diabetic friendly and WeightWatchers (4) PointsPlus per (1 Cup) serving recipe. INGREDIENTS:

4 Kiwi fruit, peeled, sliced
3 navel oranges, peeled, sliced and cut in half
2 mangos, peeled, cubed
1 pineapple, cut into bite-size chunks
2 cups  seedless red grapes
1/2 cup reduced-fat or light sour cream
2 tbsp honey
1 tsp orange zest

DIRECTIONS:

1. Combine all fruit together; place on a serving platter.

2. Mix together all remaining ingredients. Drizzle over fruit just prior to serving.

Yield: 10 Servings.
Serving Size = 1 Cup.

Citrus Salad is a healthy and a quick 30 minute recipe from start to finish. It’s a low calorie, no cholesterol, low sodium, Diabetic and Weight Watchers PointsPlus+ recipe. A great recipe that’s both healthy and delicious with grapefruit and oranges and a Vinaigrette dressing. Sure to please. Makes 4 servings at 1-1/4 cups per serving. You’ll love this Citrus Salad.

Ingredients:citrus-salad

1/4 cup chopped almonds
2 tbsp sugar
1 red or pink grapefruit
1 large navel orange
4 cups torn mixed salad greens
3 thin red onion slices, separated into rings
1/4 cup balsamic Vinaigrette salad dressing

Directions:

1. Cook nuts and sugar in a nonstick skillet over medium heat 3 to 5 minutes or until sugar is melted and nuts are evenly coated with glaze. Cool.

2. Meanwhile use a small sharp knife to peel and cut white pith from fruit. Cut each piece of fruit crosswise into 8 slices. Alternately arrange fruit, with slices slightly overlapping, around edge of platter. Toss greens with onions; place in center of platter.

3. Break almonds into small pieces. Drizzle dressing over salad just before serving. Sprinkle with nuts.

Yield: 4 servings.
Serving Size: 1-1/4 Cups per serving.
