INGREDIENTS:

4 salmon filets (1 lb total weight)
1 tsp onion powder
1 tsp seasoned salt
1/2 tsp dried dill weed
2 tsp cooking oil

DIRECTIONS:

1. Preheat oven to 450° F.

2. In a small bowl, mix all seasonings together.

3. Place fish, skin-side down, in a lightly greased baking pan. Lightly brush with oil. Sprinkle seasoning mixture evenly over fish.

4. Bake 8 to 10 minutes or until fish flakes easily with a fork.

YIELD: 4 Servings.
SERVING SIZE: 1 filet (About 4 oz) per serving.

Herb Roasted Turkey is a delicious, easy to prepare recipe for your Thanksgiving, Christmas or New Year holiday meal. The aroma will whet your appetite as it fills your home while roasting. A super tender and moist turkey will emerge as you bring it to the carving board. This will be the only turkey recipe you will use once you’ve tried this highly seasoned and tasty bird. INGREDIENTS:

1 whole turkey, (12 to 14 lb), fresh or frozen, thawed
2 tbsp rubbed sage or poultry seasoning
1 tbsp paprika
1 tbsp seasoned salt
2 tsp garlic powder
1sp ground black pepper
3/4 tsp ground nutmeg
1 large onion, cut into wedges
6 bay leaves
1 tbsp vegetable oil

DIRECTIONS:

1. Place oven rack in lowest position. Preheat oven to 325° F. Place roasting rack in shallow roasting pan. Mix together the sage, paprika, seasoned salt, garlic powder, pepper and nutmeg in a small bowl.

2. Place turkey, breast-side up, in prepared pan. Sprinkle about 1/2 of the seasoning mixture inside the turkey. Stuff with onion and bay leaves. Brush turkey breast with oil. Spread remaining seasoning mixture over entire surface and under skin of turkey. Add 1/2 cup water to pan. Cover turkey loosely with heavy duty foil.

3. Roast 1 hour. Remove foil. Roast 2 to 2-1/2 hours longer or until internal temperature reaches 165° F. (175° F. in thigh), basting occasionally with pan juices. Remove turkey from oven. Let stand 20 minutes. Transfer to platter or carving board to slice. Reserve pan juices to make gravy or to serve with turkey.

YIELD: 12 Servings.

INGREDIENTS:

1 cup butter, softened
1/2 cup firmly packed brown sugar
2-1/4 cups all-purpose flour
1/2 cup granulated sugar
1 tsp ground cinnamon

DIRECTIONS:

1. Combine butter, brown sugar and vanilla in a large bowl. Beat at medium speed, scraping bowl often, until creamy. Reduce speed to low; add flour. Beat, scraping bowl often, until mixture leaves sides of bowl and forms a smooth, soft dough.

2. Divide dough in half. Shape each half into a 6 x 2 inch round log. Wrap each log in plastic food wrap; refrigerate at least 2 hours.

3. Preheat oven to 375° F. Cut logs into 1/4-inch slices with sharp knife. Place 1 inch apart onto ungreased cookie sheets. Bake for 7 to 9 minutes or until lightly browned on edges. Let stand 5 minutes before removing from cookie sheets.

4. Stir together the sugar and cinnamon in a small bowl. Roll warm cookies in cinnamon-sugar mixture.

YIELD: 42 Cookies

INGREDIENTS:

1 (8 oz) bar cream cheese, softened
1 cup butter, softened
2/3 cup granulated sugar
1/4 tsp vanilla extract
2-1/2 cups all-purpose flour
1/2 cup colored sugar

DIRECTIONS:

1. Beat cream cheese and butter together in a large bowl with mixer until blended. Add granulated sugar and vanilla; mix well. Gradually add flour, beating well after each addition. Refrigerate at least 3 hours or until chilled.

2. Preheat oven to 350° F. Roll out dough to 1/4-inch thickness on lightly floured surface. Cut into shapes with 3- to 4-inch cookie cutters; sprinkle with colored sugar. Place, 2 inches apart, on baking sheets. If dough is too sticky just add additional flour to your work surface and rolling pin.

3. Bake 10 to 15 minutes or until edges are lightly browned. Cool on baking sheets 2 minutes. Remove to wire racks; cool completely.

TIP:
“How to Soften Cream Cheese”
Place completely unwrapped package of cream cheese in a microwaveable bowl. Microwave on HIGH 15 seconds or until just softened.

INGREDIENTS:

4 large russet potatoes, (about 3 lbs)
1/2 tsp salt
2 tbsp butter
2 pkgs cream cheese (3 oz each)
2/3 cup sour cream
1/4 cup milk
3/4 salt
1 tbsp butter, melted
1/2 tsp paprika

DIRECTIONS:

1. Place unpeeled potatoes in a saucepan; add water to cover and 1/2 teaspoon salt.

2. Bring to a boil; cover, reduce heat to medium and simmer for 25 minutes or until pototoes are tender. Drain.

3. Peel potatoes; place in a large mixing bowl, and mash with a potato masher.

4. Add the 2 tablespoons butter, cream cheese, sour cream, milk and the 3/4 teaspoon salt. Mix until all ingredients are blended.

5. Spoon mixture into a lightly greased (12 X 8 X 2-inch) baking dish. Brush top of mixture with the 1 tbsp melted butter; sprinkle with the paprika.

6. Bake immediately, or cover and refrigerate. Bake at (350 F.), uncovered for 30 minutes or until hot.

7. If refrigerated, let stand at room temperature for 30 minutes before baking.

YIELD: About 11 servings.
Serving Size: About 3/4 cup per serving.
