Cheesy Vegetable Casserole is an easy, cheesy, creamy and healthy recipe. It is a low calories, low fat, low cholesterol, low sodium, low sugars, low carbohydrates, diabetic, vegetarian and a WeightWatchers (3) PointsPlus recipe. Broccoli, cauliflower and carrots in a cheddar and cream cheese sauce cooked in the oven for a delicious and healthy side dish. Makes (12) Servings. INGREDIENTS:

Nonstick Cooking Spray
2 (16 oz) bags frozen broccoli, cauliflower, & carrots, thawed.
(To thaw: Place vegetables in a large colander. Run cool water over vegetables. Let stand 15 minutes to drain).

1 (12 oz) can evaporated skim milk
1/4 cup finely chopped onions
1/2 of an (8oz) bar Neufchatel cheese, softened & cut up
2 tbsp all-purpose flour
2 garlic cloves, minced
1/4 tsp ground black pepper
3/4 cup reduced-fat shredded sharp Cheddar cheese
2/3 cup soft whole wheat bread crumbs (about 1 slice)
2 tbsp snipped fresh parsley and/or snipped fresh basil, optional

DIRECTIONS:

1. Preheat oven to 350 F.

2. Coat a 2-quart square baking dish with the cooking spray. Arrange thawed vegetables in the baking dish. Set aside.

3. In a medium size saucepan, whisk together the evaporated milk, onion, flour, garlic and black pepper. Cook and stir over medium heat until thickened and bubbly. Remove from heat. Add cheddar cheese and  Neufchatel cheese, whisking until melted and smooth.

4. Pour cheese mixture evenly over vegetables. Toss gently to coat vegetables with sauce. Sprinkle with bread crumbs. Lightly coat crumbs with additional cooking spray.

5. Bake 40 to 45 minutes or until mixture is bubbly and crumbs are lightly browned. Let stand 5 minutes before serving. If desired, sprinkle with parsley and/or basil.

Yield: 12 servings

Vegetarian Minestrone Soup is a healthy, low calorie,  low fat, No-Cholesterol recipe. It’s both a Vegetarian and a Weight Watchers (3) PointsPlus recipe. Easy to make and full of vegetables and pasta.  Try this hearty, healthy and delicious Vegetetarian Minestrone Soup, it is sure to please all your guests.

Ingredients:vegetarian-minestrone-soup

2 tbsp olive oil or vegetable oil
2 medium zucchini, cut in half lengthwise & thickly sliced (about 3 cups)
2 garlic cloves, minced
1/2 tsp dried rosemary leaves, crushed
4 cups canned, ready to serve vegetable broth
1 (14-1/2 oz) can diced tomatoes, drained
1 (19 oz) can cannellini beans, rinsed & drained
1/2 cup uncooked rotini pasta
1/4 cup grated Parmesan cheese (optional)

Directions:

1. Heat oil in a 6 quart pot. Add in zucchini, garlic and rosemary; cook until zucchini is tender-crisp.

2. Stir in the broth and tomatoes; bring to a boil.  Reduce heat to low. Cover and cook 10 minutes.

3. Increase the heat to medium.  Stir in the beans and pasta; cook an additional 10 minutes or until pasta is tender. Serve with Parmesan cheese, if desired.
Yield: 8 Servings

2 tsp rubbed sage
3/4 tsp ground ginger
1/2 tsp coarse grind black pepper
6  bone-in center cut pork chops (3/4 inch thick), trimmed
1 tbsp cooking oil
1 cup chicken stock
1/4 cup balsamic vinegar
1 tsp garlic powder
1 tsp thyme leaves
1 cup sliced mushrooms, such as shiitake, cremini (baby bellas)
or oyster mushrooms

Directions:

 

1. Mix sage, ginger and black pepper together. Rub evenly on both sides of pork chops.

2. Heat oil in a large nonstick skillet over medium-high heat. Add chops; cook 5 to 6 minutes per side or until desired doneness. Remove chops from skillet; cover with foil to keep warm.

3. Stir chicken stock, vinegar, garlic powder and thyme into skillet, scraping to release browned bits from bottom of skillet. Stir in mushrooms. Reduce heat to medium; simmer 5 to 10 minutes or until sauce is reduced by half. Serve mushrooms and sauce over pork chops.

Yield: 6 Servings.
