Chewy Chocolate Cookies s an easy, quick and delicious recipe for chocolate cookies made with white chocolate and uses a pudding mix for the chewiness. It takes only 15 minutes to mix and only 10 t0 12 minutes to bake. It is also a generally healthy, low calories, low fat, low cholesterol, low sodium, low carbohydrates, WeightWatchers (3) PointsPlus recipe. Makes 3-1/2 Dozen. INGREDIENTS:

1 cup butter or margarine, softened
1 cup packed brown sugar
1 (3.9 oz) box chocolate instant pudding mix
2 eggs
1 tsp baking soda
2 cups flour
1-1/2 bars (4 oz each) white baking chocolate, chopped

DIRECTIONS:

1. Preheat oven to 350° F.

2. Beat butter and sugar together in a large bowl with mixer until light and fluffy. Add dry pudding mix; beat until well blended. Add eggs and baking soda; mix well. Gradually beat in flour until well blended. Stir in chocolate.

3. Drop tablespoons of dough, 2 inches apart, onto baking sheets.

4. Bake 10 to 12 minutes or until edges are lightly browned. Cool 1 minute on baking sheets; remove to wire racks. Cool completely.

Yield: 3-1/2 Dozen (42 cookies)
Serving Size: 1 Cookie per serving.

A creamy chocolate filling in a chocolate crust. Chocolate Cream Pie will be loved by family and guests alike.

INGREDIENTS:chocolate-cream-pie

1 (1.3 oz) box Chocolate fat-free, sugar-free cook & serve pudding mix
2 cups cold skim milk
1/4 cup creamy peanut butter
(2 oz) bittersweet chocolate, melted
2 cups frozen fat-free, sugar free whipped topping, thawed, divided
1 (6 oz) Oreo pie crust

DIRECTIONS:

1. Cook pudding mix with milk in a large saucepan as directed on package. Remove from heat. Whisk in peanut butter. Place pan in bowl of ice water; let stand 5 minutes, stirring occasionally.

2. Meanwhile whisk chocolate and 1/2 cup of the whipped topping until well blended. Spread onto bottom of crust.

3. Add 1 cup of the remaining whipped topping to pudding; whisk until well blended. Pour into crust. Refrigerate 3 hours or until firm. Serve topped with remaining whipped topping. Cut into 10 equal sized slices.

Yield: 10 Servings.
Serving Size: 1 Slice per serving.

Irish Cream Cheesecake is a perfect dessert for your Saint Patrick’s Day celebration. Made with Irish cream liqueur. This will serve 16 guests. Ingredients:

1-1/2 cups finely chopped pecans
2 tbsp granulated sugar
3 tbsp butter or margarine, melted
4 (8 oz) bars cream cheese, softened
1 cup granulated sugar
3 tbsp flour
1 cup sour cream
1/2 cup Irish cream liqueur
4 eggs

Directions:

1. Preheat oven to 325° F.

2. Mix together the nuts, the 2 tbsp sugar and butter; press onto bottom of a 9 inch springform pan.
Bake 10 minutes.

3. In a large bowl beat together cream cheese, the 1 cup sugar and flour with mixer until blended. Add sour cream and liqueur; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.

4. Bake for 1 hour 5 minutes or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate 4 hours.

Suggestion:
Celebrate St. Patrick’s Day by garnishing the chilled cheesecake with green colored sugar just before serving. Or, sprinkle the green colored sugar over a shamrock-shaped template placed on top of chilled cheesecake; remove template to reveal the shamrock design.

Yield: 16 servings.
Serving Size: 1 slice per serving (1/16 of recipe)
