INGREDIENTS:

1/2 cup cocoa
1/2 cup boiling water
1 1/2 cups sifted cake flour
1 cup Splenda® Sugar Blend
1/2 tsp baking soda
1/4 tsp salt
3/4 cup butter
2 large eggs, lightly beaten
1/4 cup 2% reduced-fat milk
1 tsp vanilla extract

DIRECTIONS:

1. Preheat oven to 350 F.

2. Combine cocoa and boiling water, whisking until blended. Set aside.

3. Combine flour, Splenda, baking soda and salt together in a large mixing bowl. Cut butter into flour mixture with a fork or a pastry blender until crumbly. (This procedure may be done with a mixer at the lowest speed. Cover mixing bowl with a clean tea towel to prevent spattering).

4. Combine eggs, milk, cocoa mixture and vanilla in a small mixing bowl; add 1/3 of the egg mixture to flour mixture. Beat at low speed with an electric mixer until blended. Beat at medium speed for 30 seconds or until batter is smooth, stopping to scrape down sides of the bowl. Repeat procedure twice.

5. Spoon batter into paper lined muffin tins.

6. Bake 22 minutes or until a toothpick inserted in center comes out clean. Remove from pan; cool completely on a wire rack. Dust with powdered sugar or frost with Rich Chocolate Frosting.

NOTE: Nutrition information does not include frosting.

Cupcake Cones is a great recipe that could be used for various times such as Halloween parties, birthday parties, and other special celebrations. It is a healthy, low calorie, low fat, low cholesterol, low carbohydrate, low sodium, low sugars, Diabetic and also a WeightWatchers (3) PointsPlus recipe. Cupcake Cones will be loved by everyone, especially the youngsters.

INGREDIENTS:cupcake-cones

Nonstick cooking spray
1 (2 layer size) box sugar-free white or yellow cake mix
1 cup water
3 eggs
1/3 cup canola or corn oil
2 cups diced fresh strawberries
1/3 cup sugar-free strawberry preserves
1 (8 oz) tub frozen, sugar-free whipped dessert topping, thawed
16 ice cream cones
Rainbow nonpareils

DIRECTIONS:

1. Preheat oven to 325 F.

2. Coat forty-eight 1-3/4 inch nonstick muffin cups with cooking spray. In a large bowl combine cake mix, the water, eggs, and oil. Mix according to cake mix package directions. Divide the batter evenly between prepared muffin cups. Bake for 10 to 13 minutes or until a wooden pick inserted into centers comes out clean. Cool in muffin cups on wire racks for 5 minutes. Remove from muffin cups. Cool completely on wire racks.

3. In a medium size bowl; fold strawberries and strawberry preserves into half of the dessert topping. Evenly divide mixture among the ice cream cones, spooning mixture into bottom of each ice cream cone. Place one cupcake in each ice cream cone. (Freeze the remaining 32 cupcakes for a later use.) Spoon the remaining whipped topping into a pastry bag fitted with a star tip. Pipe the whipped topping onto the cupcakes in ice cream cones. Sprinkle with rainbow nonpareils.
