Italian Omelets is an easy, quick (20) minute recipe for light omelets that uses tomatoes, Mozzarella and Parmesan cheese; seasoned with black pepper, salt, garlic, and basil. INGREDIENTS:

Topping

1/2 cup seeded & chopped tomato
2 tbsp sliced green onions
1 tbsp chopped fresh basil leaves

Eggs

1 tbsp butter
1 tsp fresh chopped garlic
4 eggs
1 tbsp water or milk
1/4 tsp salt
1/8 tsp ground black pepper
1/2 cup shredded Mozzarella cheese
2 tbsp shredded Parmesan cheese

DIRECTIONS:

1. Combine all topping ingredients in a bowl; set aside.

2. Melt butter in a 10-inch nonstick skillet over medium heat until sizzling. Add garlic; cook 1 minute.

3. Beat eggs, water, salt and pepper in a bowl at low speed until light in color and well mixed. Pour eggs into hot skillet. Cook 2 minutes; lift edge of eggs with heat proof spatula to allow uncooked portion to flow underneath 3-4 minutes or until mixture is almost set.

4. Sprinkle mozzarella cheese over half of omelet. Cover; let stand 1-2 minutes or until cheese is melted. Gently fold other half of omelet over cheese.

5. Place omelet onto plate; top with Parmesan cheese and tomato mixture. Cut in half.

YIELD: 2 Servings.

1 (4 oz) bar or (1/2 of 8 oz bar) Neufchatel cheese, softened
2 Tbsp sugar
1/2 cup blueberries, divided
1 tsp Powdered Sugar, (optional)

DIRECTIONS:

1. Preheat oven to 375ºF.

2. Unroll dough into four rectangles; firmly press perforations together to seal.

3. Combine Neufchatel and sugar; spread onto dough rectangles to within 1/2 inch of edges. Top evenly with blueberries. Bring opposite corners of rectangles together; press together to seal. Place on ungreased baking sheet.

4. Bake 11 to 13 minutes or until golden brown.
(Optional: If desired; sprinkle with 1 tsp. sifted powdered sugar just before serving).

YIELD: 4 Servings.

5-1/2 cups mashed potatoes
1/2 cup milk
1(8 oz) bar cream cheese, softened
1 cup sour cream
2 tsp dried parsley flakes
1 tsp garlic salt
1/4 tsp ground nutmeg
3/4 cup shredded Cheddar cheese
12 slices bacon, cooked crisp & crumbled (about 1/2 cup)

DIRECTIONS:

1. Preheat oven to 350° F.

2. Place all ingredients, except cheese and bacon, in a large bowl. Beat with electric mixer on medium-high speed until potatoes are smooth and creamy.

3. Spoon mixture into a lightly greased 13 x 9-inch baking dish. Sprinkle with cheese and bacon. If you prefer extra crispy bacon, reserve bacon and sprinkle at the end of cooking. Cover.

4. Bake for 30 minutes or until heated through.

INGREDIENTS:

3/4 cup small broccoli florets
3/4 cup small cauliflower florets
1/4 cup chopped onions
1/4 cup halved and thinly sliced carrots
1 tbsp reduced fat butter
1-1/2 cups skim milk
1/2 tsp instant chicken boullion
1/4 tsp salt
Dash ground black pepper
2 tbsp flour
Reduced-fat Boxed Velveeta, 1/3 cup cubed

DIRECTIONS:

1. In a large saucepan, cook the cauliflower, broccoli, onions and carrots in butter for 5 minutes or until vegetables are crisp-tender. Stir in 1-1/4 cups of the milk, bouillon, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for about 5 minutes or until vegetables are tender, stirring occasionally.

2. Combine the flour and remaining milk until smooth; add to saucepan. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Reduce heat; add cheese and stir until melted. Serve immediately.
