Norse Apple-Almond Muffins is a delicious moist recipe that is flexible to it being used as a breakfast or brunch with coffee, as a dessert or a snack. Inspired by the Norwegian apple cake served with afternoon coffee. It is also a healthy, low calories, low sodium, low fat, low carbohydrates and WeightWatchers (5) PointsPlus recipe. Chopped apples and cinnamon filled muffins with a sugared almond topping for a super rich and moist treat. Makes 12 muffins. INGREDIENTS:

Muffins

1-1/2 cups all-purpose flour
1-1/2 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
3/4 cup granulated sugar
1/3 cup butter, softened
2 eggs
2 tsp freshly grated lemon zest
1 cup peeled, finely chopped apple

Topping

1/4 cup sugar
1/4 cup sliced almonds

DIRECTIONS:

1. Preheat oven to 375° F.

2. Grease or line muffin pan cups with paper cupcake liners; set aside.

3. Combine flour, baking powder, salt and cinnamon in a bowl. Set aside.

4. Combine the 3/4 cup sugar and butter into the bowl that was set aside. Beat at medium speed, scraping bowl often, until creamy. Stir in eggs and lemon zest. Continue beating, scraping bowl often, until well mixed. Stir in flour mixture just until moistened. Gently stir in apples. Spoon into prepared muffin pan.

5. Sprinkle the 1/4 cup sugar and almonds evenly on top of each muffin. Bake 18-22 minutes or until lightly browned. Let stand 5 minutes; remove from pans.

Yield: 12 muffins
Serving Size: 1 muffin per serving

INGREDIENTS:

1/2 cup cornmeal
1/2 cup whole wheat flour
1/2 cup rye flour
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
1 cup buttermilk
1/3 cup molasses
2 tbsp brown sugar
1 tbsp canola oil
3 tbsp chopped walnuts, toasted
3 tbsp raisins
Softened cream cheese, optional

DIRECTIONS:

1. In a large bowl, combine the first six ingredients. In another bowl, whisk the buttermilk, molasses, brown sugar and oil together. Stir into dry ingredients just until moistened. Fold in walnuts and raisins. Transfer to a greased 8 inch x 4 inch loaf pan; cover with foil.

2. Place pan on a rack in a boiling-water canner or other large, deep pot; add 1 inch of hot water to pot. Bring to a gentle boil; cover and steam for 45-50 minutes or until a toothpick inserted near center comes out clean, adding more water to the pot as needed.

3. Remove pan from the pot; let stand for 10 minutes before removing bread from pan to a wire rack. Serve with cream cheese if desired.

Yield: 1 Loaf (12 slices)
Serving Size: 1 slice per serving.
