Tex-Mex Bean-Burger Soup is a quick 35 minute recipe. It is also an easy, hearty and spicy recipe for a delicious main dish meal. Black Beans, onions, corn, tomatoes, garlic, cumin and hot sauce combines with veggie crumbles to  replace the ground beef for a great hearty meal. Makes 8 servings. INGREDIENTS:

1 (15 oz) can black beans, drained
1 (14-1/2 oz) can diced tomatoes & green chiles, undrained
1 pkg (12 oz) frozen veggie ground crumbles, (such as Boca or other brand).
3 cups water
1 cup frozen corn
1 small onion, chopped
3 garlic cloves, minced
1 Tbsp ground cumin
1/2 tsp hot sauce (adjust to suit your taste)

DIRECTIONS:

1. Place all ingredients in a large saucepan and bring to a boil medium-high heat; cover.

2. Simmer over low heat 15 minutes or until veggie crumbles are cooked through (160º F.), stirring occasionally.

YIELD: 8 Servings.
Serving Size: 1 Cup per serving.

Slow Cooker Black Bean Soup is a delicious, easy and  healthy recipe. It is a Weight Watchers (4) PointsPlus+, Diabetic Recipe and also a Vegetarian recipe. It’s Low in Fat, Calories, Sodium, Low Sugar and No Cholesterol. Slow Cooker Black Bean Soup will be a favorite for both you, the cook, and all your friends aslow-cooker-black-bean-soupnd family.

Ingredients:

1-1/2 cups dried black beans, rinsed and drained
8 cups water
1/2 cup chopped onions
1 fresh jalapeno pepper, seeded & chopped
3 garlic cloves, minced
6 cups no-salt-added vegetable broth
2 tbsp ground cumin
1 tbsp chili powder
1/2 tsp salt
1/2 cup chopped fresh cilantro or cilantro sprigs
Lime slices or wedges
Light sour cream (optional)

Directions:

1.  In a large pot combine beans and the 8 cups water. Bring to a boil; reduce heat. Simmer, uncovered 10 minutes. Remove from heat. Cover and let stand for 1 hour. Drain and rinse beans.

2. In a 4 quart slow cooker combine together the drained beans, onion, jalapeno, garlic, broth, cumin, chili powder and salt.

3. Cover and cook on LOW 9 to 10 hours or HIGH 4-1/2 to 5 hours. Use a potato masher to coarsely mash some of the beans to thicken to your liking. Top each serving with cilantro and serve with lime slices or wedges for squeezing. If desired, top each serving with sour cream.

Yield: 6 Servings
