Spicy Minestrone Soup is a quick (30) minute recipe for a spicy, hearty and healthy, low fat, low calories, low cholesterol, low carbohydrates, low sugars, diabetic-friendly and Weight Watchers (6 SmartPoints), (5 PointsPlus) recipe. It is loaded with vegetables, ham and cheesy pasta. Makes 12 servings. Spicy Minestrone Soup will be loved by all of your family, friends and guests.

Cooking Time: 25 Minutes.
Total Time: 30 Minutes.

INGREDIENTS:

3 (15 oz) cans black beans, drained, rinsed
2 (14-1/2 oz) cans fat-free reduced-sodium chicken broth
1 (28 oz) can diced tomatoes, undrained
1 onion, chopped
1 zucchini, chopped
1 celery rib, chopped
1 carrot, peeled, chopped
1 (6 oz) pkg (Oscar Mayer or siimilar), baked cooked ham, chopped
1/2 tsp ground cayenne pepper
1 cup water
1 (7-1/4 oz) box macaroni & cheese dinner
2 cups fresh spinach leaves

DIRECTIONS:

1. Combine beans, broth, tomatoes, onions, zucchini, celery, carrots, ham and cayenne pepper in a Dutch oven or stockpot. Bring to a boil over medium-high heat. Reduce heat to low; cover. Simmer 10 minutes or until vegetables are crisp-tender.

2. Add in the water and the macaroni only from the macaroni dinner; stir. Cook 7 to 8 minutes or until macaroni is tender.

3. Stir in cheese sauce mix and spinach; cook 2 minutes or until spinach is wilted, stirring occasionally. Serve immediately.

Yield: 12 Servings.
Serving Size: 1 Cup per serving.

TIP: [To Thin the Soup]
Soup will thicken with standing. Add additional chicken broth or water to thin the soup, if desired.
