Slow Cooker Mexican Dip is an easy recipe for a spicy-hot, bean dip appetizer which requires a (1-1/2 Quart) slow cooker. Total recipe time: 3-1/2 hours. This recipe is best suited for holidays, game-day crowds or any large gathering. Ingredients Include: Italian sausage, refried beans, onions, salsa, chiles and tortilla chips. This could be a great option for Christmas, Thanksgiving and Cinco de Mayo. It is also a healthy, low calories, low fat, low cholesterol, low sodium, low sugars, low carbohydrates, heart-healthy, diabetic-friendly and Weight Watchers (2 SmartPoints), (2 PointsPlus) recipe. Makes: (24) servings. Slow Cooker Mexican Dip will be loved by all of your family, friends and guests.

Total Time: About 3-1/2 Hours.
Equipment needed: (1-1/2) Quart Slow Cooker.


(4 oz) uncooked turkey Italian sausage links,
casings removed

1/2 of a small onion, finely chopped
1 (15 oz) reduced-fat refried beans
3/4 cup shredded 2% Monterey Jack cheese
3/4 cup salsa
(1/2 of 4 oz) can diced green chiles, undrained
2 Tbsp shredded 2% Monterey Jack cheese, (optional)
1 (9 oz) bag scoop-shaped baked tortilla chips


1. In a medium-size skillet, cook sausage and onion over medium-high heat until meat is brown, stirring to break up sausage as it cooks. Drain off fat.

2. Transfer meat mixture to a 1-1/2-quart slow cooker. Stir in refried beans, the 3/4 cup of cheese, the salsa and chiles.

3. Cover and cook on LOW for 3 to 4 hours. If no heat setting is available, cook for 3 to 4 hours.

4. Stir well before serving. If desired, keep warm in the slow cooker on warm or LOW setting for up to 2 hours. If desired, sprinkle with the 2 Tbsp cheese. Serve dip with tortilla chips.

Yield: 24 Servings.
Serving Size: 2 Tbsp dip + 6 chips per serving.
