Mexican Chicken Soup is a spicy recipe for a hearty chicken and vegetable soup, cooked on the stovetop. Ingredients Include: Cooked chicken, chicken broth, zucchini, tomatoes, onion, celery, green peas, carrots, lentils and avocado. It is well-seasoned with cumin, red pepper, garlic and black pepper. This is also a healthy, low calories, low fat, low carbohydrates, low sodium, low sugars, diabetic-friendly and Weight Watchers (6 SmartPoints), (5 PointsPlus) recipe. Makes:(10) Servings. Serving Size: (1-1/2) cups per serving. Mexican Chicken Soup will be loved by all of your family, friends and guests.


1 Tbsp canola oil
2 garlic cloves, minced
1 medium-size onion, sliced
4 celery ribs, sliced
1/4 tsp ground black pepper
2 tsp cumin
1 tsp red pepper flakes
(64 oz) low-sodium chicken stock
2/3 cup dry lentils
1 (19 oz) can tomatoes, chopped
3 medium-size carrots, thinly sliced
(2 lbs) cooked chicken, cubed
1 small zucchini, thinly sliced
1 cup frozen peas
1 small avocado, pitted, peeled, sliced


1. In a Dutch oven, heat canola oil. Add garlic, onion and celery. Saute until vegetables are tender. Add and mix in the black pepper, cumin and red pepper flakes.

2. Add in the chicken stock, lentils, tomatoes and carrots. Simmer covered for 30 minutes or until carrots are tender.

3. Add chicken, zucchini and peas.

4. Cover and simmer 10 to 15 minutes longer or until vegetables are tender. Garnish with avocado slices.

Yield: 10 Servings.
Serving Size: 1-1/2 cups per serving.
