Hash Brown Potato Casserole is a delicious recipe for a cheesy potato side dish which takes just over (1) hour total time. This is best used as a holiday recipe for large crowds, (ie: Christmas, Thanksgiving, Easter and New Year’s Day). Ingredients Include: Frozen hash browns, bacon, onions, bell pepper, cream of mushroom soup, sour cream and cheese. This is also a healthy, low calories, low fat, low cholesterol, low carbohydrates, low sodium, low sugars, heart-healthy, diabetic-friendly and Weight Watchers (3 SmartPoints), (2 PointsPlus) recipe. Makes: (20) Servings. Hash Brown Potato Casserole will be loved by all of your family, friends and guests.

Prep Time: 20 Minutes.
Cooking Time: 50 Minutes.

INGREDIENTS:

4 slices bacon, chopped
1 onion, chopped
1 red bell pepper, chopped
1 (30 oz) bag frozen shredded hash browns, thawed
1 (10.75 oz) can reduced-fat reduced-sodium condensed cream of mushroom soup

1 cup light sour cream
1-1/4 cups 2% shredded Colby/Jack cheese

DIRECTIONS:

1. Preheat oven to 375ยบ F.

2. Cook bacon, onions and peppers in a large skillet over medium-high heat for 5 minutes or just until bacon is crisp, stirring occasionally. Transfer to a large bowl.

3. Add in hash browns, soup, sour cream and 1 cup of the cheese; mix lightly. Spoon into a 13 x 9 inch baking dish; top with remaining cheese. Bake 40 to 45 minutes or until heated through.

NOTE: (Frozen hash browns come in 2 shapes – small cubes which are called Southern hash browns, and shredded which are called country-style hash browns).
