Crockpot Chicken-Tagine is a great recipe for a spicy, Moroccan-Style chicken meal. Ingredients Include: Bone-In chicken thighs, chickpeas, onions, apricots, chicken broth and garlic. It is well-seasoned with many ecotic spices to bring out all of the flavor of this North African-style dish. It takes only (20) minutes to prepare and (7-1/4 Hours) to cook. This is also a low calories, low fat, low sodium, low sugars, low carbohydrates, diabetic-friendly and Weight Watchers (6 SmartPoints), (6 PointsPlus) recipe. Makes: (8) servings. Crockpot Chicken-Tagine will be loved by all of your family, friends and guests.

Prep Time: 20 Minutes.
Cooking Time: 7-1/4 Hours.
Required Equipment: (6) Quart Slow Cooker.


1-1/2 Tbsp canola oil
8 (5 oz) bone-in chicken thighs, skinned
1-1/4 tsp kosher salt, divided
1/2 tsp freshly ground black pepper
2-1/2 cups chopped onion
1/4 cup finely chopped fresh garlic
1-1/4 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
3/4 tsp ground turmeric
1/2 tsp ground ginger
1/4 tsp cayenne pepper
1 cup unsalted chicken stock
1-1/2 tsp honey
1 (3″) cinnamon stick
2/3 cup chopped dried apricots
2 (15 oz) cans chickpeas, rinsed, drained
1/4 cup cilantro leaves
Lemon wedges


1. Heat a large skillet over medium-high heat. Add oil to pan; swirl to coat. Sprinkle meaty side of chicken with 1/2 teaspoon of salt and black pepper. Add chicken to pan (meaty side down) and cook for 5 minutes or until well browned. Remove from pan (do not brown other side).

2. Add onion and garlic to pan; sauté 4 minutes. Add cumin and next 5 ingredients. Cook for 1 minute, stirring constantly. Add remaining 3/4 teaspoon salt, chicken stock, honey, and cinnamon, scraping pan to loosen browned bits; bring to a simmer.

3. Carefully pour mixture into a (6) Quart slow cooker. Stir inthe apricots and chickpeas. Arrange chicken, browned side up, on top of chickpea mixture.

4. Cover and cook on LOW for 7 hours. Remove the cinnamon stick and discard. Sprinkle with cilantro; serve with lemon wedges.

Yield: 8 Servings.
Serving Size: 1 Thigh + 2/3 cup chickpea mixture.
