INGREDIENTS:

1 envelope unflavored gelatin, (such as Knox brand)
1/3 cup water
1 can (15 oz) pumpkin
1 can (14 oz) sweetened condensed milk
1-1/2 tsp pumpkin pie spice
2 cups thawed, frozen whipped topping
1 large (10 inch, 9 oz) graham cracker pie crust
Whipped Topping for garnish, (optional)

DIRECTIONS:

1. Sprinkle gelatin over water in a small saucepan. Let stand 1 minute. Cook and stir over low heat until gelatin dissolves.

2. Combine pumpkin, sweetened condensed milk and pumpkin pie spice with a wire whisk until well blended. Stir in gelatin mixture. Let cool 10 minutes. Gently stir in whipped topping.

3. Pour mixture into crust. Refrigerate at least 3 hours, or until set.

4. Cut pie into 10 equal size slices. Top each serving with whipped topping if desired.

Sweet Potato Pie is a delicious recipe for this traditional Southern pie. It takes (30) minutes to prepare, but the final results are ALWAYS worth the time and effort. Made with either fresh or canned sweet potatoes, spiced with brown sugar, ginger, cinnamon, cloves, ginger and nutmeg to give the perfect, to die for flavor in a made from scratch crust. INGREDIENTS:

For Crust:

1 cup all-purpose flour
1/8 tsp salt
1/3 cup butter, cut into chunks
3 to 4 tbsp cold water

For Filling:
1-1/4ups firmly packed brown sugar
4 medium size sweet potatoes, cooked skins removed, (1-1/2 cups) mashed.
{Note: 1-1/2 cups canned mashed sweet potatoes may be substituted}.

3/4 tsp ground cinnamon
1/2 tsp salt
1/2 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1 cup (8 oz) canned evaporated milk
3 eggs

Topping:
Heavy Whipping Cream

DIRECTIONS:

1. Preheat oven to 350° F.

2. Combine flour and 1/8 tsp salt in a bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Stir in enough water with fork just until flour is moistened. Shape into a ball; flatten slightly.

3. Roll out ball of dough on lightly floured surface into a 12″ circle. Fold into quarters. Place dough into 9″ pie pan; unfold, pressing firmly against bottom and sides. Trim crust to 1/2″ from edge of pan. Crimp or flute edge. Set aside.

4. Combine all filling ingredients except evaporated milk, eggs and whipped cream in a bowl. Beat at medium speed, scraping bowl often, until well mixed. Add milk and eggs; beat at low speed until well mixed.

5. Pour filling into crust. Bake 50-60 minutes or until knife inserted in center comes out clean. If crust is browning too quickly, cover edge with a 2-inch wide strip of aluminum foil. Cool completely. Garnish with whipped cream, if desired. Sprinkle with decorator sugar, if desired. Store refrigerated.

Yield: 8 servings
