INGREDIENTS:

1/2 cup Italian salad dressing
1 cup Israeli couscous, uncooked-(Also known as pearl couscous)
1 can (14.5 oz) fat-free reduced-sodium chicken broth
1 lb frozen, cooked & cleaned medium-size shrimp, thawed
1 cup small broccoli florets
1/2 cup chopped red bell peppers
1/4 cup chopped red onions
(2 tbsp) reduced-fat mayonnaise with olive oil

DIRECTIONS:

1. Heat salad dressing in a large skillet over medium heat. Add couscous; cook 3 minutes or until lightly toasted, stirring occasionally.

2. Stir in broth. Bring to a boil; cover. Simmer over medium-low heat 10 minutes or until most of the broth is absorbed and the couscous is tender.

3. Add in the shrimp and vegetables; mix well. Cook, covered for 2 minutes. Remove from heat. Stir in the mayonnaise.

YIELD: 6 Servings.

INGREDIENTS:

Non-stick cooking spray
1 lb extra-lean ground beef
1 (16 oz) jar thick & chunky salsa*,(See Note below)
1 zucchini, chopped
1 tsp chili powder
3 cups uncooked cavatappi pasta, (or any small shaped pasta)
1 can (11 oz) no-salt-added corn, drained
1 cup 2% milk shredded Cheddar cheese, divided
1 tbsp lime juice
1/4 cup chopped cilantro

NOTE:*
For spicier flavor: add 1 Tbsp mashed (canned chipotle peppers in adobo sauce) with the salsa.

DIRECTIONS:

1. Brown ground beef in a large skillet sprayed with cooking spray; drain. Stir in salsa, zucchini and chili powder; simmer over low heat 10 minutes, stirring occasionally. Meanwhile, cook pasta as directed on package.

2. Stir corn and 1/2 cup cheese into meat mixture; cook 3 minutes or until cheese is melted, stirring frequently.

3. Drain the pasta; place in a large bowl. Add meat mixture, lime juice and cilantro; mix lightly. Top with remaining cheese.
