Slow Cooker Beef Ragout is an easy, delicious and nutritious recipe. It is low in calories, fat, carbohydrates and low in sugars. It’s also a Weight Watchers (6) Points+ and a (2) Carb Choice Diabetic recipe. Slow Cooker Beef Ragout will be loved by family and friends alike. Makes 6 Servings.

Ingredients:slow-cooker-beef-ragout

1 lb beef stew meat, cut into 1 inch cubes
1 (16 oz) can kidney beans, drained, rinsed
1 (15 oz) can onion-garlic tomato sauce
1 (14-1/2 oz) can no-salt stewed tomatoes, undrained
1 (28 oz) pkg frozen Potatoes O’Brien (about 4 cups)
2 tsp Italian seasoning, crushed
Fresh oregano leaves (optional)

Directions:

1. In a 3-1/2 or 4 quart slow cooker stir together meat, beans, tomato sauce, tomatoes, potatoes and Italian seasoning.

2. Cover and cook on LOW 8 to 10 hours or HIGH 4 to 5 hours. If desired, garnish each serving with oregano leaves.

Yield: 6 Servings.
Serving Size: 1 Cup per serving.

INGREDIENTS:

1/2 lb ground beef
1 onion, chopped
2 tbsp flour
2 (14-1/2 oz) cans fat-free reduced-sodium chicken broth
1 (14-1/2 oz.) cans diced tomatoes, undrained
3/4 lb (12 oz) Velveeta®, cut into 1/2-inch cubes
4 tsp sweet pickle relish
40 unsalted tops saltine crackers

Directions:

1. Brown meat with onions in a large saucepan; drain.

2. Stir in flour; cook and stir 2 minutes Add broth in and tomatoes; cook over medium-low heat 5 minutes or until heated through. Stir in Velveeta; cook and stir 8 to 10 minutes or until Velveeta is completely melted and soup is heated through.

3. Spoon into soup bowls; top with relish. Serve with crackers.

Yield: 8 Servings
Serving Size: 1 Cup Chowder and 5 crackers per serving

Ingredients:

1 tbsp mixed pickling spice
2 tbsp olive oil, divided
2 lbs beef stew meat, trimmed, cut in1 to 1-1/2″ cubes
4 carrots, cut into 1/2 inch slices
1 onion, cut into wedges
1 tsp garlic powder
1 tsp dried Rosemary leaves, crushed
1 tsp salt
2 (14-1/2 oz) cans diced tomatoes, undrained
1 cup beef stock or red wine
1 tbsp flour
8 slices day-old Italian bread, toasted

Directions:

1.  Place the pickling spice in the center of piece of cheesecloth or coffee filter. Tie tightly with long piece of string.

2. Heat 1 tablespoon of the oil in large deep skillet or Dutch oven on medium-high heat. Add beef in batches; cook until browned on all sides. Add remaining 1 tablespoon oil as needed. Return beef to skillet. Add carrots, onion, garlic powder, rosemary and salt. Stir in tomatoes and wine or beef stock. Add pickling spice bundle; cover.

3. Reduce heat to medium-low; simmer 1-1/2 hours or until beef is tender. Remove pickling spice bundle.

4. To thicken stew, mix flour with 1 tablespoon water in small bowl until smooth. Stir in several tablespoons of the hot liquid from stew, then stir flour mixture into stew. Cook and stir 2 to 3 minutes or until stew thickens slightly. To serve, place 1 bread slice in the bottom of each bowl. Spoon stew over bread.

SLOW COOKER DIRECTIONS:
Prepare pickling spice bundle and beef as directed in Steps 1 and 2. Transfer ingredients to slow cooker; cover. Cook 8 hours on LOW or 4 hours on HIGH. Remove pickling spice bundle. Thicken and serve as directed in Step 4.

Yield: 8 Servings
Serving Size: 1 Cup Stew & 1 Bread slice per serving.

Prep Time: 15 Minutes.
Cooking Time: 1 Hour-15 Minutes.

INGREDIENTS:

2 tbsp cooking oil
(1-1/2 lb) trimmed lamb shoulder, or boneless leg of lamb,
cut into 3/4″ cubes
2 tbsp flour
1 large onion, coarsely chopped
1-1/2 cups dark beer
1 cup beef broth
1 envelope Italian salad dressing mix
3 medium size potatoes, cut into 1″ chunks
(1/2 lb) carrots (about 4 medium), cut into 1″ chunks
(1/2 lb) parsnips (about 2 medium), cut into 1″ chunks

Directions:

1. Heat 1 tbsp of the oil in a large heavy saucepan or Dutch oven over medium-high heat. Coat meat with the flour. Add in batches to saucepan; cook until evenly browned, stirring occasionally and adding remaining 1 tbsp oil as needed. Remove meat from saucepan; set aside. Add onions to saucepan; cook and stir 2 minutes.

2. Stir the beer, broth and dressing mix into the onions in saucepan. Return meat to pan. Bring to a boil, stirring occasionally. Reduce heat to low; cover and simmer for 30 minutes.

3. Add in the potatoes, carrots and parsnips; stir. Cover. Simmer another 30 minutes Uncover; simmer 15 minutes longer or until meat is cooked through, vegetables are tender and sauce is thickened, stirring occasionally.
