French Breakfast Muffins is a delicious recipe that can be used for breakfast, brunch, a snack or even dessert. This was a very popular recipe from the 1970’s. Great for Thanksgiving and Christmas also. Cinnamon, sugar, nutmeg and butter combine together to bring out the flavor of doughnuts. A quick (15) minutes of prep time and 35 minutes, start to finish. Makes 12 servings. French Breakfast Muffins will be loved by your entire family, friends and guests.

Muffins:

1/2 cup milk
1/3 cup melted butter
1 egg, beaten
1-2/3 cups all-purpose flour
3/4 cup sugar
1-1/2 tsp baking powder
1/2 tsp nutmeg
1/2 tsp salt

Topping:

1/3 cup melted butter
1/2 cup sugar
1 tsp ground cinnamon

Spread

Butter

DIRECTIONS:

1. Preheat oven to 375° F.

2. Grease a 12 cup muffin pan; set aside.

3. Combine milk, 1/3 cup melted butter and egg in a bowl. Set aside.

4. In another bowl, combine flour, 3/4 cup sugar, baking powder, salt and nutmeg. Add in the egg mixture; stir just until combined.

5. Spoon batter into prepared pan. Bake 15-20 minutes or until toothpick inserted comes out clean.

6. Place the 1/3 cup melted butter in a bowl. Combine 1/2 cup sugar and cinnamon in another bowl. Remove muffins from pan; let stand 2 minutes to 5 minutes on cooling rack.

7. Serve warm with butter.

YIELD: 12 servings.
Serving Size: 1 per serving.

INGREDIENTS:

Muffins

1-1/2 cups all-purpose flour
1-1/2 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
3/4 cup granulated sugar
1/3 cup butter, softened
2 eggs
2 tsp freshly grated lemon zest
1 cup peeled, finely chopped apple

Topping

1/4 cup sugar
1/4 cup sliced almonds

DIRECTIONS:

1. Preheat oven to 375° F.

2. Grease or line muffin pan cups with paper cupcake liners; set aside.

3. Combine flour, baking powder, salt and cinnamon in a bowl. Set aside.

4. Combine the 3/4 cup sugar and butter into the bowl that was set aside. Beat at medium speed, scraping bowl often, until creamy. Stir in eggs and lemon zest. Continue beating, scraping bowl often, until well mixed. Stir in flour mixture just until moistened. Gently stir in apples. Spoon into prepared muffin pan.

5. Sprinkle the 1/4 cup sugar and almonds evenly on top of each muffin. Bake 18-22 minutes or until lightly browned. Let stand 5 minutes; remove from pans.

Yield: 12 muffins

INGREDIENTS:

1 (8 oz) can refrigerated crescent dinner rolls
1 (4 oz) bar or (1/2 of 8 oz bar) Neufchatel cheese, softened
2 Tbsp sugar
1/2 cup blueberries, divided
1 tsp Powdered Sugar, (optional)

DIRECTIONS:

1. Preheat oven to 375ºF.

2. Unroll dough into four rectangles; firmly press perforations together to seal.

3. Combine Neufchatel and sugar; spread onto dough rectangles to within 1/2 inch of edges. Top evenly with blueberries. Bring opposite corners of rectangles together; press together to seal. Place on ungreased baking sheet.

4. Bake 11 to 13 minutes or until golden brown.
(Optional: If desired; sprinkle with 1 tsp. sifted powdered sugar just before serving).

YIELD: 4 Servings.
