Russian-Style Potato Salad is an easy and delicious recipe which will work well for large gatherings and holidays such as Thanksgiving and/or Christmas dinners. It will go well with pork, beef and poultry. Total recipe time is only (1 Hour-10 Minutes). Ingredients Include: Potatoes, carrots, green peas, onions and boiled eggs. This is also a low calories, low fat, low sugars, low carbohydrates, diabetic-friendly and Weight Watchers (5 PointsPlus), (6 SmartPoints) recipe. Makes: (8) servings. Russian-Style Potato Salad will be loved by all of your family, friends and guests.

Prep Time: 25 Minutes.

Cooking Time: 15 Minutes.

Total Time: 1 Hour-10Minutes.


2 large potatoes, peeled and sliced lengthwise
3 carrots, peeled and sliced lengthwise
1 (15 ounce) can sweet peas, drained
3 dill pickles, chopped, or more to taste
1 onion, finely chopped
3 bologna slices, chopped (optional)
2 hard-boiled eggs, chopped
2 tablespoons mayonnaise
2 tablespoons sour cream
1/2 teaspoon salt
Ground black pepper (to taste)


1. Place the potatoes and carrots into a large pot and cover with salted water and bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 minutes. Drain and rinse with cold water until cold then dice potatoes and carrots.

2. Combine potatoes, carrots, sweet peas, pickles, onion, eggs and (bologna if using) together in a large bowl.

3. Stir the mayonnaise, sour cream, salt and black pepper gently into potato mixture until well combined.

4. Cover bowl with plastic wrap and refrigerate until cold, at least 30 minutes.

Yield: 8 Servings.
Serving Size: 1/8 of recipe.
