2 Tbsp butter
1/2 cup chopped onions
1/2 cup thinly sliced celery
1-3/4 cups chicken broth
3 cups peeled, cubed, potatoes
1-1/2 cups milk
1 Tbsp chopped parsley
1. Heat the butter in a 3 quart size saucepan over medium heat. Add in onions and celery; cook until tender.
2. Add in and Stir the broth and potatoes into the saucepan; heat to a boil. Reduce heat to low.
Cover and cook 15 minutes or until potatoes are tender.
3. Place half of the broth mixture and half of the milk in a blender or food processor. Cover and blend until smooth.
Repeat with the remaining broth mixture and remaining milk.
4. Return to the saucepan and heat through. Season to taste. Sprinkle with the parsley before serving.
Yield: 5 Servings.
