1 whole egg
3 egg whites
6 slices deli-sliced smoked ham, chopped
2 (8″) whole wheat tortillas
1/4 cup shredded 2% Cheddar cheese
1. Beat the whole egg, egg whites and ham together until well-blended. Preheat a skillet sprayed with cooking spray over medium-high heat. Add in egg mixture; cook 2 minutes or until esggs are set; while occasionally stirring and turning.
2. Warm tortillas for a few seconds in microwave. Spoon 1/2 of egg mixture down center of each tortilla; top with cheese. Fold in opposite sides of each tortilla, then roll up burrito-style.
Yield: 2 servings.
