1 (9″) Pre-Baked pie crust
1 (15 oz) can pumpkin
3/4 cup granulated no-calorie sweetener
2 Tbsp cornstarch
1/2 tsp ground cinnamon, (adjust as desired)
1-1/2 tsp pumpkin pie spice, (adjust as desired)
1/8 tsp salt
1/2 cup fat-free half & half
1/2 cup liquid egg substitute
3 Tbsp heavy whipping cream
1 Tbsp vanilla extract
Sugar-free, Fat-Free Whipped Topping, optional
1. Preheat oven to 400 F.
2. in a medium-size mixing bowl add in the pumpkin, sweetener, cornstarch, spices, and salt. Mix until all ingredients are well blended. Add remaining ingredients and mix well.
3. Pour filling into the prepared crust. Place in oven and bake 35-40 minutes or until pie set in the center and crust is golden brown. Top each serving with whipped topping if desired (Optional).
Yield: 8 servings.
