Chicken Caesar Salad is an easy and quick (25) minute grilling recipe for a delicious spring or summer meal. Grilled chicken is layered over the top of Romaine lettuce and tomatoes, well seasoned with creamy Caesar salad dressing drizzled on top. 2 (4 oz) boneless, skinless chicken breast halves
2 tsp olive oil
1/8 tsp dried basil
1/8 tsp dried oregano
1/4 tsp garlic salt, optional
1/4 tsp ground black pepper
1/4 tsp paprika
4 cups torn Romaine lettuce
1 small tomato, thinly sliced
Creamy Caesar salad dressing
Caesar salad croutons, optional
1. Preheat a grill to medium-low heat.
2. Brush chicken with olive oil. Combine the basil, oregano, garlic salt if using, black pepper and paprika; sprinkle over chicken. Place chicken on grill and cook uncovered for 12-15 minutes or until a meat thermometer reads 170° F., turning several times.
3. Arrange and divide the lettuce and tomato in equal size amounts onto 2 plates. Cut chicken into strips, divide equally and arrange over top of salads. Drizzle with dressing. Sprinkle with croutons if desired.
Yield: 2 servings.
