Non-stick cooking spray
(1 lb) boneless beef stew meat,
cut in bite-size pieces
3 Tbsp flour
(1 lb) sweet potatoes, peeled, cut in (1″) pieces
1 (28 oz) can no-salt diced tomatoes, undrained
1 zucchini, cut in (1″) thick slices
1 onion, chopped
4 cloves garlic, minced
1/2 cup fat-free, low-sodium beef broth
1/4 cup A.1. steak sauce or similar brand
1 Tbsp dried basil leaves
Hot Cooked Brown rice, optional
1. Toss meat with flour in a slow cooker sprayed with cooking spray. Add all remaining ingredients except basil; stir. Cover with lid.
2. Cook on HIGH (4-6) hours or LOW (6-8) hours.
3. Stir in basil before serving.
4. OPTIONAL: Serve over Hot Cooked Brown rice if desired.
Yield: 6 Servings.
