Easy Strawberry Pie is a delicious recipe that works well for spring and summer seasons. Cooking Time: 20 Minutes.
Refrigeration Time: 2 Hours.

INGREDIENTS:

1 cup graham cracker crumbs
1/4 cup granular no-calorie sweetener, divided
3 Tbsp. margarine, melted
1/4 cup cornstarch
1-1/2 cups water
1 (0.3 oz) box sugar-free strawberry gelatin
4 cups fresh strawberries, quartered
1/2 cup thawed sugar-free whipped topping

DIRECTIONS:

1. Preheat oven to 375ยบ F.

2. Mix 1 Tbsp of the granulated sweetener and the 3 Tbsp margarine together. Press onto bottom and up the sides of a 9″ pie pan. Bake 8 to 10 minutes or until lightly browned; cool.

3. Meanwhile, mix remaining granulated sweetener, cornstarch and water in a medium-size saucepan. Bring to a boil over medium heat, stirring constantly; cook and stir 5 minutes or until thickened. Add in dry gelatin mix; stir 2 minutes or until completely dissolved.

4. Pour about 1/3 cup of the gelatin mixture into crust. Mix remaining gelatin mxture with strawberries; pour into crust. Refrigerate 2 hours or until firm. Top with the whipped topping. Cut into 8 equal sized servings.

Yield: 8 servings.
Serving Size: 1/8 of pie per serving.
