Healthy Zucchini Muffins is a delicious recipe for a treat, dessert, breakfast or brunch option. Ingredients include: Grated zucchini, cinnamon applesauce, brown sugar and walnuts. It takes only (14) minutes of  baking time for these delicious and super-moist muffins. This is also a low calories, low fat, low cholesterol, low sodium, low sugars, low carbohydrates, heart-healthy, diabetic-friendly and Weight Watchers (4 SmartPoints), (3 PointsPlus) recipe. Makes: (24) Muffins. Healthy Zucchini Muffins will be loved by all of your family, friends and guests.

Prep Time: 25 Minutes.
Cooking Time: 14 Minutes.

INGREDIENTS:

Non-Stick cooking spray
1-1/2 cups all-purpose flour
3/4 cup almond flour
1 cup packed brown sugar
3/4 cup oat bran or wheat bran
3 Tbsp chia or flax seeds
2 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
2 large eggs, lightly beaten
3/4 cup buttermilk
1/3 cup cinnamon applesauce
2 tsp vanilla extract
3 cups peeled and grated zucchini, drained (about 2 medium)
Chopped walnuts, optional

DIRECTIONS:

1. Preheat oven to 350° F. Lightly coat a mini-muffin pan with cooking spray; set aside.

2. In a large bowl, combine the flours, brown sugar, oat bran, chia or flax seed, baking soda, baking powder and cinnamon; set aside.

3. In another large bowl, combine the eggs, buttermilk, applesauce and vanilla. Stir in zucchini, mixing just until combined. Stir in flour mixture just until combined. Do not over-stir.

4. Spoon 1 Tbsp of batter into each muffin cup. If desired, top with walnuts. Bake for 12 to 14 minutes or until a toothpick inserted in center comes out clean.

5. Let cool in pan on a wire rack for 5 minutes. Remove muffins from pan to a wire rack. Cool completely. Repeat with remaining batter.

Yield: 24 Serviings. (24 muffins)
