Grilled Chicken Kabobs is a delicious Italian-style recipe you’ll want to add to your spring and summer grilling rotation. Ingredients include: Chicken breasts, bell peppers, onion, mushrooms and cherry tomatoes with a Dijon mustard vinaigrette for basting. This is also a healthy, low calories, low fat, low carbohydrates, low cholesterol, low sodium, low sugars, heart-healthy, diabetic-friendly and Weight Watchers (5 SmartPoints), (5 PointsPlus) recipe. Makes: (4) servings with a (2) kabobs per serving size. Grilled Chicken Kabobs will be loved by all of your family, friends and guests.

Cooking Time: 15-20 Minutes.


8 Wooden skewers
2 Tbsp white wine vinegar
3 Tbsp garlic-flavored olive oil
1 tsp Dijon mustard
(1/2 lb) boneless, skinless chicken breasts, cut into thin strips
1 pint cherry tomatoes
1 small onion, cut into chunks
1 green bell pepper, seeded, cut into chunks
(8 oz) whole fresh mushrooms
Salt and ground black pepper (to taste)


1. Soak skewers in water for 30 minutes.

2. To make vinaigrette: Whisk together the vinegar, olive oil, mustard, salt and black pepper.

3. Thread skewers with chicken, cherry tomatoes, onion, bell pepper and mushrooms.

4. Brush kabobs with vinaigrette. Grill, uncovered, for 15 to 20 minutes or until chicken is cooked through and vegetables are tender.

Yield: 4 Servings.
Serving Size: 2 kabobs per serving.
