3/4 cup quinoa, uncooked
1-1/2 cups water
1/2 cup reduced-fat Mayonnaise with olive oil
1/4 cup Italian salad dressing
1/4 cup fresh lemon juice
2 cups cherry tomatoes, halved
1 cucumber, peeled, seeded, chopped
8 green onions, sliced
1/2 cup chopped fresh basil
1. Rinse quinoa in a metalic-mesh strainer; drain. Add to a small saucepan with water; bring to a boil. Cover; simmer over low heat 15 minutes. Remove from heat. Let stand 5 minutes. Transfer into a large bowl. Refrigerate 1 hour.
2. Mix together the Mayonnaise, salad dressing and lemon juice until well blended.
3. Fluff quinoa with a fork. Add the Mayonnaise mixture and remaining ingredients; mix lightly.
Yield: 12 Servings.
