Non-Stick cooking spray
1 green bell pepper, chopped
1 red bell pepper, chopped
1 small onion, chopped
2 cups cholesterol-free egg product
1 cup skim milk
3/4 cup 2% shredded Cheddar cheese
1 tsp Italian seasoning (Adjust to taste)
1/4 tsp black pepper (Adjust to taste)
4 slices whole wheat bread, torn
1. Preheat oven to 350° F.
2. Cook vegetables in medium-size nonstick skillet sprayed with cooking spray over medium-high heat 4 minutes or until crisp-tender, stirring occasionally. Place in a large bowl. Add in egg product, milk, cheese and seasonings; mix well.
3. Place bread in a 2 quart-size square casserole dish sprayed with cooking spray; top with egg product mixture.
4. Bake 45 to 50 min. or until knife inserted in center comes out clean.
Yield: 4 Servings.
