1 (10 oz bag fresh baby spinach leaves
2 medium-size carrots, chopped
2 medium-size celery ribs, chopped
1 large onion, chopped
1 garlic clove, minced
4 cups low-sodium vegetable broth
1 (28 oz) can diced tomatoes, undrained
2 bay leaves
1 tbsp dried basil
1/2 tsp dried oregano leaves
1/2 tsp crushed red pepper flakes
1. Place all ingredients in a slow cooker. Cover and cook on HIGH 5 hours or LOW 8-10 hours.
2. Remove bay leaves, stir and serve.
Yield: 8 Servings.
