Chicken-Coconut Soup is known natively as “Tom Kha Gaia”. This is a delicious and quick (30 minute) recipe for a highly spiced Thai chicken soup. Ingredients include: Chicken, straw mushrooms, coconut milk, ginger, lenmongrass, lime juice, shallots and red pepper. It is simmered on the stovetop and takes only 15 minutes to prepare with a 15 minute cooking time. It is also a healthy low calories, low fat, low carbohydrates, Weight Watchers (5) PointsPlus recipe. A great option for your Asian meal rotation. Makes (8) servings. 2 cups chicken stock
1 (13.6 oz) can coconut milk
2 (15 oz) cans straw mushrooms, drained
2 shallots, finely chopped
2 (4″) pieces lemongrass, bruised
1 tsp ground ginger
1/4 tsp crushed red pepper
(1-1/2 lbs) boneless, skinless chicken breasts, thinly sliced
1/4 cup fresh lime juice
2 tbsp packaged, asian-style fish sauce, (such as “Thai Kitchen” or other brand)
1/4 cup chopped fresh cilantro
1. Bring stock, coconut milk, mushrooms, shallots, lemongrass, ginger and red pepper to a boil in a large saucepan. Reduce heat to medium-low; simmer 5 minutes.
2. Stir in chicken; simmer 5 minutes longer or until cooked through. Stir in lime juice and fish sauce. Remove lemongrass pieces.
3. Ladle into soup bowls. Serve with cilantro.
YIELD: 8 Servings.
