Pork Chops Florentine is an easy and quick (35) minute Italian-style recipe. This is a great option to use to get your family to eat spinach also, as they won’t even know it is there. Pork chops, frozen spinach, onions and marinara sauce are combined and all cooked in a skillet; then topped with cheese. Add pasta if desired. This is also a low calories, low fat, low carbohydrates, low sugars, diabetic-friendly and Weight Watchers (8 PointsPlus), (8 SmartPoints) recipe. Makes: (6) servings. Prep Time: 5 Minutes.
Cooking Time: 30 Minutes.

INGREDIENTS:

2 Tbsp olive oil
(1-1/2 lbs) boneless pork chops, 3/4″ thick, (6 chops)
1 medium onion, thinly sliced (about 1/2 cup)
1 (24 oz) jar marinara sauce
1 (10 oz) box frozen leaf spinach, thawed, well drained

(To thaw spinach, microwave on for HIGH 3 minutes, breaking apart with a fork halfway through heating).

1 cup shredded fat-free Mozzarella cheese
Whole grain pasta, (optional)

DIRECTIONS:

1. Heat 1 Tbsp of the oil in a 12″ skillet over medium-high heat. Add in the pork chops; cook until chops are well browned on both sides. Remove and set them aside.

2. Reduce heat to medium and add remaining oil. Add in onion. Cook and stir until onion is tender-crisp.

3. Stir marinara sauce and spinach into the skillet and bring to to a boil. Return pork chops to skillet; reduce heat to low. Cover and cook until chops are cooked through. Sprinkle with cheese. Optional: serve with whole grain pasta if desired.

YIELD: 6 servings.
Serving Size: 1/6 of recipe.
