Crockpot Tex-Mex Beef Stew is a delicious and easy to prepare recipe that combines barbecue sauce and salsa for a fabulously flavored meal that will serve a crowd. (2 lbs) boneless beef stew meat, cut into 2″ x 1″ pieces
2 tbsp flour
2 tbsp chili powder
2 carrots, sliced
1 onion, chopped
3 celery ribs, sliced
1 cup frozen corn
1 (15 oz) can kidney beans, drained & rinsed
1 (16 oz) jar thick & chunky salsa
1 cup water
1/4 cup barbecue sauce
1 cup shredded Cheddar cheese
1. Brown meat, in batches in a large nonstick skillet over medium heat. Add to slow cooker. Sprinkle with flour and chili powder; stir to evenly coat meat.
[NOTE: Wet meat causes steaming. For better browning, dry meat with paper towel before cooking].
2. Add in all remaining ingredients except cheese; stir. Cover with lid. Cook on LOW 6 to 8 hours. (For best results do NOT cook on HIGH).
3. Top each serving with the cheese.
Yield: 8 Servings.

Biggest Loser BBQ-Bacon Cheeseburger is a delicious grilling recipe for a healthier than the original version. You will save: 180 calories, 22 g fat and 8 g saturated fat with this recipe. Ingredients include: lean ground beef, low fat Swiss cheese, low fat bun, red onion, bacon and barbecue sauce. Total time to prepare and cook is 30 minutes or less. (4 oz) 96% lean ground beef
Pinch of salt
1-1/2 slices center-cut bacon
1 reduced-calorie hamburger bun
(1/2 oz) 2% Swiss cheese slivers
1 to 2 tbsp red onion slivers
2 tsp barbecue sauce
1. Pack the ground beef tightly together with your hands; shape it into a 4-inch-diameter patty on a sheet of wax paper. Sprinkle lightly with salt on both sides, and then place in the freezer for 5 minutes (to help the patty keep its shape).
2. Preheat a grill to high.
3. Cut the whole bacon strip in half crosswise. Lay the 3 half strips side by side in a small nonstick skillet over medium heat. Cook, ﬂipping them every couple of minutes, until crispy and well done (6 to 8 minutes). Transfer bacon to a paper towel–lined plate to drain.
4. Meanwhile, remove the patty from the freezer and place it on the grill. Cook for 1 to 2 minutes per side for medium rare, or until the desired doneness is reached. Toast the bun halves on an upper grill rack for 30 seconds to 1 minute, watching them carefully. Place the cheese on top of the burger for the last few seconds of cooking so it just begins to melt.
5. Add the patty to the toasted bun bottom. Lay the bacon strips side by side over the top. Place the onion over that. Spread the BBQ sauce evenly over the inside of the top half of the bun. Place top bun on. Serve immediately.
Can be made in 30 minutes or less / No more than 20 minutes hands-on prep time .

Tex-Mex Sloppy Joes is a delicious, easy and quick 30 minute recipe for what will become the ONLY way you will ever make sloppy Joes again! Much better than the canned version and only 5 ingredients for a spicy and sweet sandwich. Ground beef, barbecue sauce, Picante sauce and onions simmered and served on sesame buns. All cooked on the stove top. Makes 5 sandwiches. Tex-Mex Sloppy Joes will be loved by all your family and friends.
1 lb ground beef
3/4 cup Picante sauce
1/2 cup barbecue sauce
2 green onions, sliced (about 1/4 cup), or 1/4 cup chopped regular onion
5 sesame seed topped hamburger buns, split and toasted
1. Cook ground beef in a 10-inch skillet over medium-high heat until it’s well browned, stirring often to separate meat. Pour off any fat.
2. Stir the picante sauce, barbecue sauce and green onions into the skillet. Cook until mixture is hot and bubbling. Lower heat and simmer for 10 to 15 minutes so that flavors blend. Divide the beef mixture evenly among the buns.
YIELD: 5 Sandwiches. Serving Size: 1 Sandwich per serving.
