Grilled Bruschetta Salmon is a quick, (45 Minute), delicious and easy recipe for your summer grilling menu. You will NOT need a baguette to make this delicious recipe with a chopped tomatoes, garlic and basil topping. It is also a healthy, low calories, low fat, low carbohydrates, low sodium, low sugars, diabetic-friendly and Weight Watchers (5 SmartPoints), (5 PointsPlus) recipe. Makes 6 servings. Grilled Bruschetta Salmon will be loved by all of your family, friends and guests.

Prep Time: 20 Minutes.
Cooking Time: 25 Minutes.grilled-bruschetta-salmon

INGREDIENTS:

1 tomato, chopped
1/2 small sweet onion, thinly sliced
1 garlic clove, minced

1/4 cup shredded Parmesan cheese
1/4 cup sun-dried tomato vinaigrette salad dressing made
with extra-virgin olive oil, divided

1 (1-1/2 lb) skin-on salmon fillet
2 tbsp chopped fresh basil

DIRECTIONS:

1. Preheat grill to medium.

2. Combine together the first 4 ingredients with 3 Tbsp. of the salad dressing.

3. Spray a large sheet of heavy-duty foil with cooking spray; place on grill grate. Top with fish, flesh side down. Grill 5 minutes; turn and brush with remaining salad dressing; top with tomato mixture.

4. Grill 18 to 20 minutes or until fish flakes easily with fork; top with basil.

Yield: 6 Servings.
