Grilled Chicken Kabobs is an easy and delcious grilling recipe you’ll be adding to your spring and summer grilling menu. Chicken breasts are cut up and marinated in Italian salad dressing then grilled with bell peppers. Total recipe time including marination time is (1-1/2) hours. This is also a healthy, low calories, low fat, low carbohydrates, low sugars, low sodium, low sugars, diabetic-friendly and Weight Watchers (4 PointsPlus), (4 SmartPoints) recipe. 1 lb boneless skinless chicken breasts, cut into 1-1/2 inch pieces
1 each red, yellow and green bell pepper, cut into 1-1/2 inch pieces
1/2 cup light Italian salad dressing, divided
1. Thread chicken and peppers alternately onto 4 skewers; brush with 1/4 cup of the salad dressing.
2. Refrigerate for 1 hour.
3. Preheat grill to medium heat. Grill kabobs (12 to 15) minutes or until chicken is done, turning and brushing occasionally with remaining dressing.
(If using wooden skewers, soak skewers in water for 30 minutes before using to assemble kabobs. This prevents them from burning on the grill).
Yield: 4 Servings.
