Black-Eyed Pea Salad is an easy recipe that can be used as a salad, side or even as a dip with tortilla chips. This would work well for your New Year’s Day dinner. Ingredients Include: canned blackeye peas, bell peppers, celery, onions and hot sauce. It is well-seasoned and refrigerated overnight. This is also a healthy, low calories, low fat, low cholesterol, low sodium, low sugars, low carbohydrates, heart-healthy, diabetic-friendly and Weight Watchers (2 PointsPlus), (5 SmartPoints) recipe. Makes: (8) servings. Black-Eyed Pea Salad will be loved by all of your family, friends and guests.

INGREDIENTS:

1-1/2 cups canned blackeye peas, drained
3/4 cup chopped green bell peppers
1/2 cup chopped celery
3/4 cup chopped red onions
1/4 cup granulated no calorie sweetener
1/2 tsp salt
1/2 tsp freshly ground pepper
1 garlic clove, minced
1/4 cup vegetable oil
2 Tbsp cider vinegar
1/2 tsp hot sauce

DIRECTIONS:

1. Combine black-eyed peas, bell peppers, celery and onions in a large bowl; set aside.

2. Combine together the sweetener, salt, pepper, garlic, vegetable oil, vinegar and hot sauce; whisk until blended. Pour dressing over black-eyed pea mixture, tossing gently to coat. Cover and chill overnight.

Yield: 8 Servings.
Serving Size: 1/2 cup per serving.
